Are you acquainted with “miracle noodles”? Well, if not let me have the honor to introduce you to a low carber’s answer to pasta and rice. Yes, you reading correctly pasta and rice on a low carb plan. This amazing noodle is made of shirataki, a type of root that crazy enough has no carbs and no calories. Yup, zero! It’s basically just pure fiber and it takes on the flavor of whatever you are cooking it in.

Now, the downside is that it comes in this fishy, stinky like liquid. Don’t ask me why, I have no clue it just does. My response to that is get over it and quickly. Before you cook these noodles or rice you must rinse it well for at least a good two minutes in cool water. Rinsing is a must otherwise your dish will have that stinky smell/taste etc.

Low Carb “Rice Pudding”

Ingredients:

1 pkg miracle rice

½ cup whipping cream

½ cup water

1 egg yolk

¼ cup swerve or other sugar substitute

2 tbs of butter

1 pinch salt

½ tsp of guar gum

½ tsp vanilla

Cinnamon (to taste)

Directions:

Rinse the miracle rice in water several times for at least two minutes. In a small pot on medium low heat place the whipping cream, water, egg yolk, truvia, and salt. Bring to a simmer and stir constantly. Then add the guar gum. (this is a low carb thickener, that acts like cornstarch to help thicken the custard) once the custard starts to thicken add the miracle rice . Lastly, add the 2 tbls. of butter and pour into small cups and let cool. Sprinkle with cinnamon to taste before eating.

Makes 4 small servings.
