Leftovers my love and hate relationship

I must admit, me and leftovers have not always been best friends. I would have to confess that many a times a tub of leftovers, has sat in my fridge ignored only to be tossed. It’s a terrible thing when this happens not to mention that it’s a great waste of money and time. However, I have to be honest and admit I just don’t always know what to do with my leftovers or I don’t frankly want to eat the same thing again. Picky, picky, I know.

I can be a bit of snob when it comes to leftovers, if I don’t use them by the next day they may end up being  tossed. I know that is a horrible, a tragic crime but its confession time. I just get all freaked out and start thinking that they are spoiling and that I may end up serving my family a plate of salmonella or such. So, out they go with the daily trash instead.

Lately, though I have really been working on our relationship and trying to think ahead of how to use my leftovers. So I am happy to report no waste has occurred. I know that I am nowhere near where some people are and so I would love to hear your comments.

How did you get pass any phobias and what are some of your favorite leftover meals? Today I used some of my leftover pot roast and fried some eggs. I made me some mean Huevos Rancheros!
