Nothing beats the smell of waking up to muffins in the oven. Unless, they are healthy guiltless ones! Its so satisfying to know that we can serve our family healthy options.
Blueberry Cinnamon Muffins
1/2 cup golden flax seed meal
1/4 cup coconut flour or almond flour
1/4 cup swerve or other sugar free baking sweetener
1 1/4 tsps baking powder
2 tsp cinnamon
1/4 tsp salt
1/4 cup water
2 tsps of melted butter
1 tsp vanilla
3/4 cup Blueberries
3 tbs Truvia Bake 2 tsp cinnamon In a bowl mix well
Mix the flax meal, coconut flour, sweetener, baking powder, cinnamon, and salt. In a separate small bowl, beat the eggs. Stir in the water, melted butter and vanilla. Add wet ingredients to the dry and then fold in the blueberries. Line muffin cups with papers. Spoon the batter into the cups. Fill halfway with batter then top with ½ tsp the cinnamon topping. Bake the muffins at 325 degrees until the tops are lightly browned and the middle is set. 15 to 20 minutes depending on your oven. Enjoy!
