We are in the middle of a heat wave here in good ole Miami, Fl and so we are taking full advantage of ice cream season. In the past I would think twice about a serving of ice cream because I was afraid of all the calories. Today, I have some wonderful recipes that are not only low carb, but actually good for you. I make a low carb magic shell that is a fantastic way of adding more coconut oil to your diet. I can’t think of a better way to add this marvelous fat and enjoy the benefits of all the antioxidants in chocolate. Not to mention that this magic shell is free from all those chemicals we can’t even pronounce.
Homemade Low Carb Magic Shellce
1 cup coconut oil
¼ cup high quality cocoa powder
¼ teaspoon sea salt
1 teaspoon vanilla
½ cup swerve or other sugar substitute
In a small sauce pan over low heat, allow to melt all the ingredients until fully combined. At this point you can use a blender to help emulsify the ingredients. Serve over low carb ice cream.
