Low Carb Spicy Whole Roasted Cauliflower Head !

 
Today, I am posting a great spicy cauliflower recipe from Lina Otegui-Dubon. Lina recently joined our FittoServegroup on Facebook and signed up for our 60 day challenge, Get Fit By the Holidays. So proud of Lina’s journey. I look forward to seeing her accomplish all her goals!

Cauliflower is great friend to low-carb eaters, as it can easily substitute for starchier foods such as potatoes and rice.  I made this recipe which I found on the internet. It was great, although next time I’ll reduce the chili!

Ingredients
1 tablespoon olive oil
1 head cauliflower
1 cup plain Greek yogurt (8oz)
1 lime, zested and juiced
1-2 tablespoons chili powder (+/- depending on how spicy you want it)
1 tablespoon cumin
1 tablespoon garlic powder
1 teaspoon curry powder
2 teaspoons iodized sea salt
1 teaspoon black pepper

Directions
1. Preheat the oven to 400° and lightly grease a small baking sheet with olive or coconut oil. Set aside. (I used my NuWave Oven, Hi setting-1Hr.)
2. Trim the base of the cauliflower to remove any green leaves and the woody stem.
3. In a medium bowl, combine the yogurt with the lime zest and juice, chili powder, cumin, garlic powder, curry powder, salt and pepper.
4. Dunk the cauliflower into the bowl and use a brush or your hands to smear the marinade evenly over its surface.
