Low Carb Nutty Granola Bars

An easy low carb granola bar! It’s a perfect treat packed with goodness. Enjoy!

I am a granola girl at heart, so coming up with low carb version was just a matter of time. I am very pleased with my first attempt at bringing granola back into my life. It’s easily customizable, just swap out the 1/2 cup of pecans and add sugar free chocolate chips or other low carb options. I personally can’t wait till the fresh cranberries start popping up at my grocery stores. I plan on making my own sugar free dried cranberries, stay tuned for that recipe!

4 egg whites

1 ¼ cup of swerve or 1 cup of other sugar substitute

¼ cup softened butter

2 tablespoon of peanut butter

2 cups of roughly chopped almonds

1 cup of roughly chopped cashews

½ cup roughly chopped pecans

1 cup flaxseed meal

¼ cup coconut flour

2 tsps of chia seeds

½ tsp sea salt

½ tsp of baking soda

tsp of vanilla
