This easy keto mocha coconut milk ice cream is a delicious low-carb vegan dairy-free recipe. The recipe is quite possibly the simplest way to enjoy a healthy frozen treat.

It’s a sugar-free, low-carb keto-friendly ice cream recipe that uses only 5 ingredients and it’s churn-free!

You’re going to love how creamy and flavorful this keto vegan ice cream is. It’s the perfect non-dairy ice cream that anyone doing a keto diet who is also not consuming dairy will appreciate.

Since this recipe only uses a handful of ingredients, it’s a great alternative for those who are wanting a simple cold creamy treat but would rather do without the dairy. 

The final result is a decadently rich treat that is sure to fool your tastebuds without the use of dairy. 

How To Make Keto Mocha Coconut Milk Ice Cream

With virtually zero effort and no special equipment, you can indulge in a rich, creamy mocha-flavored ice cream that also happens to be dairy-free and keto-friendly.

To make this no-churn low carb coconut milk ice cream, you’ll need either a blender to combine all the ingredients or use an electric mixer.  Personally, I recommend a blender since it’s more effective in creating a smooth creamy texture.

Once fully combined, you’ll pour the mixture into two freezer-safe rectangle pans and freeze till solid, about 2 hours. Since this recipe uses no-artificial stabilizers or additives, the ice cream will freeze firmer than say, traditional ice cream. 

To combat this, just allow the frozen ice cream to sit on the counter for a few minutes before serving so that it has a scoop-able consistency. 

For an even creamier option, you can stir the ice cream every 30 minutes with a fork to break up any ice from forming as the coconut milk freezes. 

Then just serve as soon as it’s frozen to your liking. I made this a mocha-flavored frozen treat by using both cocoa powder and instant coffee. However, you could just make this a keto chocolate coconut milk recipe by leaving out the instant coffee. 

In fact, if you leave out the cocoa powder and instant coffee and replace it with a teaspoon of vanilla extract, you could have a vanilla keto ice cream that is also scrumptiously delicious.

Best Sugar Substitute For Keto Vegan Mocha Ice Cream

As far as choosing your sweetener, my top choice is a monk fruit/erythritol blend. My personal favorite is Lakanto’s brand. But you can also use Swerve an erythritol sugar substitute. 

You could also use the stevia and erythritol-based brand Pyure for this ice cream. However, if using Pyure you will want to use half the amount called for in this recipe since it’s a much sweeter choice. 

Lastly, if you can’t easily find a more natural sugar substitute, you can also use Splenda or a generic brand of the same. It will work with great success. I know not everyone would agree with me here and I respect that, but in my book, it’s still better than regular sugar.

Keto Mocha Coconut Milk Ice Cream

This recipe for keto mocha coconut milk ice cream is not only delicious, but it's also super easy to make. With a total of 5 ingredients, you can enjoy a low-carb homemade mocha ice cream that is churn-free.

Instructions

  1. Using an electric blender all the ingredients until well combined. Alternatively, you can use a large bowl and combine the mixture with an electric mixer on low.
  2. Pour the ice cream into two 9x5 inch pans and place them in the freezer to freeze solid for about 2 hours.
  3. Allow the ice cream to soften on the counter for about 10-15 minutes before enjoying.
  4. For a creamier version, stir the ice cream with a fork every 30 minutes to break up the ice from the coconut milk for a smoother texture. Then serve as soon as it is frozen to your preference.
  5. Store in the freezer for up to 3 weeks.

This recipe makes about 2 quarts but can easily be halved for those wanting a smaller yield recipe.

I just wanted to share, that I followed the recipe exactly and loved it. I experimented and put half the batch in a loaf pan, and the other half into popsicle molds. The consistency was perfect - and made for fancy mocha fudgecicles. Yum! Thank you for this simple but delicious recipe. It will be definitely be used a lot in our house over summer.

On average there are about 13.5 ounces in a coconut milk can. If there is a little more say 14 ounces that works fine too.

Fabulous!

I accidentally doubled the coffee as I was cutting the recipe in fourths. Added soaked, dried and diced up almonds, Lilys chocolate chips, and vodka (to cut the icing). Super delicious!!!!
