Using Chayote For A Low Carb Mock Apple Cobbler
What if I told you that there was a way to enjoy the flavor of apples in a low carb keto diet? Well, my low carb mock apple cobbler uses chayote squash as a fantastic apple substitute.
It was while I was on a quest to create some holiday recipes that I stumbled on a genius way of using chayote. Isn’t it great when you stumble upon something that changes the way you see something? This is what happened after boiling a chayote to use as a side dish and I decided instead to use it as an apple substitute.
You need to know that at the time I was really bummed about not being able to use apples in my holiday baking. The problem with apples, is that they are quite high in sugar making them a no-no on a low carb keto diet. This is especially true if you suffer from insulin resistance and can’t handle high sugar in your diet.
If you are not familiar with chayote let me share with you some of it’s characteristics. Chayote is a light green firm vegetable that is part of the gourd family. It’s a cucurbitaceae, along with melons, cucumbers and squash. Chayotes are quite versatile and can be eaten raw, steamed, baked, and boiled. When eaten raw it tastes similar to jicama.

The flavor reminds me of a very mild pear with the mouth feel of an apple. A winner for my low carb fall recipes! Which is why I decided to use it as an apple substitute.The best part is that they are low in carbs, and high in potassium, folate, fiber and vitamin C.
Chayote A Great Apple Substitute
Chayote is native to central Mexico, where it’s seen as a Mexican version of zucchini. It grows rather abundantly and is therefore not uncommon to see it used in various Mexican dishes.
Honestly, I really didn’t know a lot about the origins of chayote or it’s nutritional benefits until I thought of using it as an apple substitute.

Low Carb Mock Apple Cobbler

A low carb mock apple cobbler made with chayote squash a great low carb keto friendly apple substitute.

- 4 Chayote Squash, cooked, peeled and diced
- 1/2 cup lemon juice
- 1/2 cup of Swerve or other sugar substitute
- 2 tablespoons of cinnamon
- ¼ teaspoon of ginger powder
- dash of nutmeg
- 2 large eggs
- 1 cup of almond flour
- ¼ cup of coconut flour
- ½ stick of cold butter (sliced into small pieces)
- 3/4 tsp baking powder
- 3 tbsp Swerve or other sugar substitute
- Boil the whole chayote with enough water to cover them. Cook for about 20 minutes. They should still be firm but cooked through.
- Create the crumb crust by mixing all the dry ingredients first then adding the egg and butter. Do not over mix you want it to stay crumbly.
- Peel and chop the now cooled chayote. Add all the dry spices, sugar substitute and lemon juice to the chayote and combine well.
- In a baking dish that has been greased well with butter add the seasoned a chayote and top with the crumb crust
- Bake in oven at 350 degrees until hot and bubbly for 25-30 minutes.
