These keto gingerbread cookies make the perfect addition to the holiday table. It’s a recipe that makes a flavorful cookie dough that can be rolled, shaped, and decorated with icing.

Or shaped into balls and rolled in granulated sugar substitute for keto ginger snaps.

This sugar-free gingerbread is a wonderful keto cookie recipe to bake with the kids since it can be decorated.

If you’re a fan of gingerbread cookies and want a low-carb version that is loaded with flavor, these cookies were made with you in mind.

My recipe for low-carb gingerbread cookies is packed with flavor. The recipe is made with a generous dose of ginger, cinnamon, and nutmeg, which are the more prominent spices.

Although the gingerbread dough of these cookies is on the spicy side, note that it just refers to the lovely amount of dried spices used and not heat.

The kids will love these cookies, too.

It has the same flavor profile that my family enjoyed when I used to bake a traditional high-carb version for them every holiday season prior to going keto.

I was determined to create an authentic gingerbread cookie recipe that was low in carbs and would not cause a blood sugar spike.

It also had to be a recipe for gluten-free gingerbread cookies that could fool their tastebuds since it’s one of my family’s favorite cookies.

Although that seemed like a tall order, you must remember that gingerbread cookies have always been my favorite Christmas cookies. Needless to say, I was determined to get it right. 

Given the choice of any cookie, I will always gravitate toward this seasonal favorite.

Gingerbread Cookies, A Family Holiday Favorite

I am pretty sure that my enthusiasm for these holiday cookies made my children fall in love with them, too. How else can you explain why young children love a ginger-spiced cookie?

Admittedly, the fact that these were among the cookies that would be rolled and cut out into adorable shapes in our home also probably had something to do with it.

So when I told you I needed a keto gingerbread cookie recipe that would rival what my children grew up on, I wasn’t kidding because it was pretty much a must-have for our family.

There is just something about the fragrance of ginger and cinnamon that always puts my family in a bright Christmas mood.

And it’s why Christmas music always went hand in hand with baking these cookies.

Early in December or late in November, they made an appearance, signaling that it was time to celebrate the birth of our Savior. It was a tradition that we all hold close to our hearts.

Making low-carb recipes together is now part of our family tradition, so it is possible to be festive and still remain healthy.

Keto Almond Flour Gingerbread Cookies

These are almond flour gingerbread cookies that clock in at only 2.1 g net carbs per cookie.

They use low-carb ingredients that are also gluten-free, making it the best keto recipe for when it needs to be low in carbs, sugar-free, and gluten-free!

With a few good years under my belt and some trusty keto baking tips I learned along the way, I was ready to birth a recipe for keto gingerbread cookies.

Well, I am happy to report that this tradition is safely back in our family’s lives. These spicy keto gingerbread cookies turned out exactly as I had hoped.

How To Make Keto Gingerbread Cookies

The tricky part of creating a keto gingerbread cookie was the need for the dough to be sturdy enough to roll and cut out.

After all, a true gingerbread cookie recipe needs to be able to be cut into all sorts of holiday shapes.

The recipe produced a firm cookie, which was important because I hate when the gingerbread heads get lopped off when putting them in a cookie jar.

So, what is my secret to ensuring that these cookies are firm? I added a tablespoon of psyllium powder to the cookie dough.

This small amount of psyllium powder was all it needed to give it a little extra stability, and, as an added bonus, it made it higher in fiber.

The recipe also calls for one tablespoon of molasses as a flavor enhancer. One tablespoon of molasses adds a negligible amount of carbs to the entire recipe.

Alternatively, you can choose to add a molasses extract instead.

It’s also important to note that you’ll want to chill the dough for at least 30 minutes. 

Chilling the dough before using cookie cutters will make the process easier and prevent the dough from spreading while baking.

It’s a pretty straightforward recipe that has you cream the butter and the sweetener together, add the dry ingredients, including the spices, and then chill the dough.

Once the dough has had time to chill, the fun part of cutting it into shapes and baking begins. 

It’s important to note that these are cooked at a preheated 325-degree oven temperature to ensure they have the perfect texture.

Best Brown Sugar Substitutes

It’s important to note that this recipe calls for a sugar substitute for brown sugar.

You have a few options to choose from.

If you prefer sugar-free gingerbread cookies that have a crisp texture, I recommend using Lakanto brown or gold.

However, if you want chewy gingerbread cookies, I recommend using Swerve brown sugar or Surkin Gold as your brown sweetener.

This recipe for keto gingerbread cookies is packed with seasonal flavors. The cookie dough is sturdy enough to be rolled and cut out into traditional holiday shapes or rolled into ginger snaps. It's the perfect cookie to add to your holiday cookie platter.

Instructions

  1. In a large stand-up mixer, beat the sugar substitute, butter, molasses, vanilla extract, and eggs until fully incorporated.
  2. Next, add all the dry spices to the wet ingredients.
  3. Once thoroughly combined, add the almond flour, psyllium powder, baking powder, and salt to the mix and beat well.
  4. Flatten the dough with a rolling pin between two sheets of parchment paper.
  5. Chill the dough for 30 minutes before using cookie cutters.
  6. Preheat the oven to 325 degrees.
  7. Cut the rolled cookie dough using cookie cutters that are around 2-3 inches. Recipe makes 24 large cookies or 48 small cookies.
  8. Bake for 12-15 minutes for the large cookies. Bake the small cookies for 10-12 minutes.
  9. Allow the cookies to cool completely before decorating them with the keto royal icing.
  10. Store leftovers in the refrigerator for up to 5 days or freeze them for up to 3 weeks.

Royal Keto Icing

1. In a small bowl, combine the confectioners' sugar substitute with one tablespoon of heavy cream or water. If the icing is too thick, add the other tablespoon of liquid.

2. Place the icing in a piping bag with a small decorating tip and decorate the cookies to your liking.

ALTERNATIVE TOPPING

If you want powdered gingerbread cookies, just spread 1/4 cup the sugar-free confectioners' sugar substitute in a shallow bowl and pat each cookie into the powder on both sides.

Hello! I enjoy so many of your recipes. Your pound cake is a staple, I use it plain,,,spiced with cardamom or cinnamon. I want to try these gingerbread cookies. I hope you do not mind i make a few changes.i grew up in Scandinavia, and we LOVE our spiced gingerbread. My grandmother’s trusted recipe calls for melting and browning the butter,,add the spices and let it simmer to bring out max spice flavour, more so than just adding them dry. She then cooled the butter again, so it could be creamed with the sugar once it was firm again, it really creates an extra depth to this kind of cookie with browned butter with spices. We even add a bit cayenne to it. Just a bit though. I was so excited seeing your cookies using similar process, so I can not WAIT TO enjoy gingerbread while on keto. Thank you!
