If there was one thing that I prided myself on when I used to make regular homemade biscuits, was that they were always nice and light. After all, who want’s to have a hockey puck for a biscuit? I’ve had my fair share of biscuits and can I say they haven’t all been that great. However, I am pretty proud of these biscuits. I can’t wait for you to try these light and airy low carb keto cheesy biscuits,  you may just find yourself swearing off bread forever.

Do you know that years ago my love for biscuits even caused a little ruckus during a youth group trip. It was back when my husband and I were youth pastors, let’s just say I wasn’t proud of the way I behaved. All because the restaurant had run out of biscuits. Yeah that stunt of mine gave the youth group a great laugh and some of them still talk about it today. Frankly, I was seriously upset that they had no more biscuits for this girl.

Just ask the youth who attended that trip and they will tell you I was just a tad too passionate about wanting my biscuits. In fact, I even wanted my meal price reduced because they had run out. LOL, today you couldn’t pay me to eat a regular biscuit. Oh, how this girl has grown up.

Low Carb Keto Cheesy Biscuits

Ingredients

  • 1 ¾ cup of almond flour sifted
  • 2 tablespoons of coconut flour
  • 1 ½ tablespoon of baking powder
  • ¼ tsp sea salt
  • ½ cup of sour cream
  • 2 eggs
  • 4 tablespoons of melted butter
  • ½ cup of sharp cheddar cheese
  • 2 tablespoons of freshly grated parmesan cheese

Instructions

  1. Pre-heat oven to 375 degrees.
  2. Place the sifted almond flour (sifting is vital, don’t skip this step) coconut flour, baking powder, salt, in a large mixing bowl and stir until fully combined.
  3. Two the dry ingredients add the sour cream, melted butter, cheddar cheese, and eggs. Combine until fully incorporated.
  4. Place dough by large spoonfuls unto a parchment lined, or lightly greased baking sheet.
  5. Sprinkle the tops of each biscuit with parmesan cheese.
  6. Bake the biscuits for 20 minutes or until lightly golden brown on the top.

    I know this may seem like a silly question but do you sift the flour before or after measuring? I'm never really sure which way to do it. Would love to try this recipe. Thanks.

      Hi Michelle! No question is ever silly. Traditionally you would sift and then measure. However, that's NOT what I do when using almond or coconut flour. I choose to sift after I measure. Please share your input after you make. 😜🤗
