  • Large bowl for the cookie dough
  • Separate bowl for the orange icing

How To Make Coconut Flour Cranberry Cookies

But why coconut flour as a flour alternative? Well, coconut flour is not actually flour in the traditional sense.

Do you know that coconut flour actually has no grains, no nuts, and is made completely of pure coconut? This makes for a great nut-free, low-carb baking flour.

Making these low-carb cookies is a delicious breeze.

You’ll start by combing the dry ingredients first—the coconut flour, baking powder, and salt—and setting them aside.

Then, in a large bowl, with an electric mixer, you’ll cream the butter, cream cheese, sweetener of choice, orange zest, and orange extract.

Using a rubber spatula, scrape the bowl a few times to ensure it is all well combined.

Then, you will need to chill the cookie dough for at least 30 minutes so that the cookies do not spread when baking.

Once the cookie dough has chilled, you’ll bake the cookies in a preheated 350-degree oven for about 15 minutes or until lightly golden around the edges.

Allow the cookies to cool, and make the orange icing by combining all the ingredients.

Then, drizzle the top of the cookies with the icing.

Store any leftovers in an airtight container for five days in the refrigerator, or freeze for up to three weeks.

Ever wonder what the process is for making coconut flour?

To turn a coconut into a flour-like consistency, there are some important steps that need to be taken.

First, you have to separate the coconut milk from the coconut meat, and then bake the coconut that is extracted until it completely dries out.

At that point, you can mill the dry coconut meat and leaves it with a powder that resembles flour.

Although you cannot substitute coconut flour equally for regular flour, it is a viable solution once you learn how to bake with it.

Coconut flour is a favorite in the low-carb, keto, and paleo communities, as well as for those who need to eat a gluten-free diet. 

Coconut flour is easy to digest, so anyone with a nut allergy can appreciate this nut-free flour option.

It is a great choice, especially for a flour alternative that won’t raise your blood sugar.

Best Sugar Substitutes For Sugar-Free Cranberry Cookies

When choosing the best sugar-free sweetener, I have several options for you to choose from.

I really like Lakanto Monk Fruit Sweetener because the texture is spot on and because there is barely any aftertaste. Plus, it uses only natural ingredients.

This is a great one, especially if you are new to sugar substitutes, because it mimics sugar the most, in my opinion.

I’m also partial to Swerve, an erythritol blend, although you should keep in mind that it does have a bit more of a cooling aftertaste that some people dislike. 

Alternatively, you could also use a stevia- and erythritol-based brand like Pyure. 

This is if you prefer to use stevia in your baked goods. If you go this route, you need to reduce the amount by half since it is twice as sweet.

Lastly, if you can’t easily find a more natural sugar substitute, you can also use Splenda with great success.

I know not everyone would agree with me here, and I respect that, but in my book, it’s still better than regular sugar.

However, when it comes to icing, you will have to use a confectioner’s sugar substitute. Both Lakanto and Swerve have great ones.

These delicious nut-free keto cranberry orange cookies are made with coconut flour, and fresh or frozen cranberries for a delicious low carb treat.

Ingredients

Keto Orange Glaze:

Instructions

  1. Stir together coconut flour, baking powder, and salt, and set aside the dry ingredients.
  2. In a separate bowl, beat together butter, cream cheese, sugar substitute, orange zest, and orange extract, until fully combined.
  3. Add the eggs, and beat well after each addition.
  4. Stir in the 1/2 cup of chopped cranberries.
  5. Add dry ingredients to the wet mixture, and beat until fully combined.
  6. Chill the dough for at least ½ hour.
  7. Preheat oven to 350 degrees.
  8. Measure a tablespoon at a time of cookie dough and roll them into balls.
  9. Flatten slightly each ball onto a parchment-lined cookie sheet.
  10. Bake for 15 minutes or until lightly brown around the edges.
  11. Allow cookies to cool for 30 minutes before drizzling the low-carb orange glaze.
  12. Store leftovers in the refrigerator for up to 5 days or freeze them for up to 3 weeks.

Keto Orange Glaze

  1. In a small bowl combine sugar-free confectioner's sweetener, lemon juice, orange extract, salt, and heavy whipping cream.
  2. Drizzle the glaze over the fully-cooled cookies.

Hi again.. my apologies, my mistake.. I am still learning. I see the sweetener you used does not have any carbs.. I thought they were all similar. I just tossed two bags of Erythritol in the garbage. I would think by now after 8 week I would know to read EVERY label.

@Bridgette Lepiania, erythritol is carb free too, it’s sugar alcohols that is stated as carbs but the body doesn’t absorb it, it just passes through the therefore negligible carb count.

It says fresh or cranberries. Is that fresh or dried cranberries? I’m new to keto and the item I miss most are these cranberry orange muffin tops Kroger makes in their bakery. I simply can’t be trusted with them in my house. —having said that I’m so excited to try your recipe.

Hi Amber, the cranberries need to be either fresh or frozen but NOT dried. Unfortunately, dried cranberries can be very high in sugar. Enjoy!
