Another vital tip is to make sure you are actually using pumpkin puree and not pumpkin pie filling. I can’t tell you how often people make the mistake of using the wrong one.

  • Unsweetened coconut flakes
  • Unsalted butter (cold and thinly sliced)

How To Make A Keto Pumpkin Coconut Flour Coffee Cake

Making this seasonal coffee cake is pretty straightforward. You’ll begin by preheating your oven to 350 F. Then, in a large mixing bowl, combine coconut flour, a sugar substitute, spices, baking powder, and sea salt, then set this mixture aside.

In a separate medium bowl, mix the cooled melted butter, pumpkin puree, sour cream, and eggs until well blended.

Gradually fold the dry ingredients into the wet mixture until fully incorporated. Once combined, spread the batter evenly into a greased 9-inch pan.

Next, in a small bowl, you’ll make the coconut flour streusel topping by combining a sugar substitute, coconut flour, coconut flakes, salt, cinnamon, ginger, and nutmeg.

Then, add cold, thinly sliced butter to the dry ingredients and use a pastry cutter or two forks to cut in the butter until the mixture resembles coarse crumbs.

Sprinkle the streusel topping over the batter and gently tap it into the surface to help it adhere.

Bake the coffee cake in the preheated oven for 30-35 minutes on the center rack. The cake is ready when a toothpick inserted in the center comes out clean.

While the cake is baking, prepare the sugar-free vanilla icing by mixing a confectioner’s sugar substitute tablespoons of heavy whipping cream, vanilla extract, and a pinch of salt in a small bowl.

If the icing is too thick, add another tablespoon of heavy cream to reach the desired consistency.

Once the cake has baked, allow it to cool for at least one hour before drizzling the icing on top.

You can serve the coffee cake warm or at room temperature. Any leftovers should be stored in an airtight container in the refrigerator for up to five days or can be frozen for up to three weeks.

This keto pumpkin coconut flour coffee cake is a spice-filled cake that is low in carbs and keto-friendly. It features a streusel topping that has the perfect crumb. Since it's made with coconut flour, it is also a nut-free option.

Keto Coconut Flour Streusel Topping

  • 3/4 cup of coconut flour
  • 1/3 cup of sugar substitute
  • 1/3 cup of unsweetened coconut flakes
  • 1/2 cup of unsalted butter (cold and thinly sliced)
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon of ground nutmeg
  • 1/4 teaspoon sea salt

  1. Preheat your oven to 350 degrees.
  2. In a large mixing bowl, combine the coconut flour, sugar substitute, spices, baking powder, and sea salt and set aside.
  3. In a medium bowl, stir the cooled melted butter, pumpkin puree, sour cream, and eggs until well combined. 
  4. Then, fold the dry ingredients into the wet mixture and combine until well incorporated.
  5. Spread the batter into the well 9-inch greased pan.

Keto Coconut Flour Streusel Topping

  1. In a small bowl, combine the sugar substitute, coconut flour, coconut flakes, salt, cinnamon, ginger, and nutmeg. 
  2. To the dry ingredients, add the cold, thinly sliced butter and cut in the butter with a pastry cutter or two forks until the mixture resembles coarse crumbs.
  3. Spread the coconut flour streusel to the top of the batter.
  4. Gently tap the streusel into the surface of the cake to help it adhere to the top of the cake batter.

Baking The Keto Pumpkin Coconut Flour Coffee Cake

  1. Bake your keto pumpkin coconut flour coffee cake for 30-35 minutes in a preheated 350-degree oven in the center rack of your oven.
  2. The cake will be done when an inserted toothpick comes out clean.

Keto Vanilla Icing

  1. In a small bowl, combine the confectioner's sugar substitute
  2. Whisk in the four tablespoons of heavy whipping cream, the vanilla extract, and a pinch of salt. Add a tablespoon of heavy cream if the icing is too thick.

  1. Allow your cake to cool for at least 1 hour before drizzling the icing on the coffee cake.
  2. Slice and serve your coffee cake warm or at room temperature.
