Keto Vanilla Scones

These keto vanilla scones make the perfect on-the-go breakfast or snack. It’s a no-roll, delicious keto recipe for vanilla-flavored scones!

They are tender, low-carb vanilla scones that are oh-so flavorful. Plus, they feature decadent vanilla icing that further accentuates the rich flavor of vanilla.

It’s a copycat recipe for Starbucks vanilla scones, except this one is not loaded with sugar and carbs! You’re welcome.

Having a scone that is low in carbs is incredibly satisfying and always silences my sweet tooth without being overly sweet. Enjoy these healthy scones with a cup of coffee or your favorite tea for one amazing treat.

This keto scone recipe stands apart from traditional ones because it uses a wet mixture that can be spread rather than rolled and is baked in a cast-iron skillet.  

However, you should know these can also be baked in a cake pan lined with parchment paper. 

That said, I sure hope that you get your hands on a cast-iron skillet at some point because the crust it produces is unmatched.

Traditional scones are quick bread, making them super easy to make. They use baking powder or baking soda instead of yeast as their leavening agent. 

In this case, low-carb scones are even easier since the dough is just mixed and spread in the pan.

If I had to compare scones to something, they would be like biscuits, except scones are usually on the sweeter side. 

Keep in mind that scones are also a little less flaky, but other than that, they share many similarities to biscuits. 

These low-carb, gluten-free vanilla scones are made with a combination of almond flour and coconut flour for the perfect texture, making them a great snack for anyone on a ketogenic diet.

How To Make Keto Vanilla Scones

In an effort to keep things extra simple for you, I made these scones with only vanilla extract and not vanilla bean powder. For one, vanilla bean powder or paste can be very expensive, and many of them are packed with sugar. 

If you want to add vanilla beans to these scones, I would just use one vanilla bean pod and scrape the beans yourself. One vanilla pod is the equivalent of one teaspoon of vanilla extract. 

Personally, I think you just use a high-quality vanilla extract and get similar results with less fuss and cost. Olive Nation has a great one.

Classic scone making usually involves cold butter sliced thinly and cut into the flour. But I use melted butter in my keto scone recipes.

Since keto baking is very different from high-carb baking, somehow, the use of melted butter with the two types of keto-friendly flour works well every single time.    

Keep in mind that low-carb scones are void of gluten, so there is no worry of overworking the dough. It’s what makes these gluten-free vanilla scones a great, easy treat for anyone avoiding gluten and doing keto. 

These vanilla scones require you to combine the dry ingredients separately from the wet ingredients and then mix and spread them into the prepared pan.   

Then, they are baked in a preheated 350-degree oven. Once the scones are golden brown and have cooled, they are glazed with a sugar-free vanilla glaze.

  • Confectioners’ sugar substitute  (a powdered sweetener that is keto-friendly)
  • Vanilla extract
  • Heavy cream or even almond milk
  • One vanilla bean for a keto vanilla bean scones (optional)

Best Sugar Substitutes For Sugar-Free Vanilla Scones

My top choice is a monk fruit/erythritol blend. My personal favorite is Lakanto’s brand. But you can also use Swerve an erythritol sugar substitute.

You could also use the stevia and erythritol-based brand Pyure for most of my baked goods.

However, since Pyure is a much sweeter choice, you will want to use half the amount called for in this recipe. 

Lastly, if you can’t easily find a more natural sugar substitute, you can also use Splenda for baking or a generic brand of the same. It will work with great success.

I know not everyone would agree with me here, and I respect that, but in my book, it’s still better than regular sugar.

However, when it comes to the keto vanilla glaze, you will have to use a confectioner’s sugar substitute. Both Lakanto and Swerve have great ones.

Instructions

Keto Vanilla Scones

  1. Pre-heat oven to 350 degrees
  2. Grease with butter a 9-inch cast-iron skillet.
  3. Melt the butter and set aside to cool. 
  4. Using an electric mixer combine the sugar substitute, melted butter, and the eggs.
  5. Add the sour cream, vanilla extract, and combine well.
  6. Next add the dry ingredients (the almond flour, coconut flour, baking powder, and salt) then stir until fully combined.
  7. Spread the batter into a fully greased 9-inch cast-iron skillet. If you do not own a cast-iron skillet, grease a round 9-inch cake pan
  8. Bake for 25-30 minutes or until an inserted toothpick comes out clean.
  9. Allow the scones to cool completely.
  10. Drizzle the keto vanilla glaze over the top.
  11. Store your keto vanilla scones in the refrigerator for up to 5 days or freeze for up to three weeks.

Keto Vanilla Glaze

  1. Combine the confectioner's sugar substitute with 3-4 tablespoons of heavy whipping cream and 1 teaspoon of vanilla extract.
  2. Start with 2 tablespoons of cream and more if needed.
  3. Drizzle the vanilla glaze over the top of the fully cooled scones and allow the glaze to set before enjoying.
