It’s the easy, low carb soup you will want to make all soup season.
You’ll start by sautéing the chopped onions and garlic in butter until they are translucent and tender in a 5-quart pan.
Then, you’ll add the spinach to the onion mixture and cook down the spinach until it’s completely wilted. This should take anywhere from 5-7 minutes over medium-high heat.
To the wilted cooked spinach, add the heavy cream, room-temperature cream cheese, broth, and spices, and cook over medium heat until the spinach soup thickens, about 10–15 minutes.
Once the spinach soup has had time to reduce and thicken, you’ll add the Parmesan cheese and stir until the cheese melts into the soup and is fully incorporated.
Allow the soup to cool slightly before pureeing it using a blender or immersion mixer.
How To Safely Puree Hot Soup in Blender
Anytime you are pureeing soup in a blender, it’s essential to allow the soup to cool for a few minutes before blending. This can take anywhere from 5 to 10 minutes.
Before adding the soup to the blender, be sure to remove the center cap from the lid of your blender. Then, place a folded kitchen towel over the top of the blender. Hold the towel in place with your hand firmly; this is key so that you do not risk getting burned by the soup as it progresses.
Adding the towel will allow the steam to escape safely. It’s also crucial to fill the blender halfway. And to blend the soup in small batches.
Once the soup is fully blended, return it to the pan to heat through before serving.
Store leftovers in an airtight container in the refrigerator for up to three days. I do not recommend freezing creamy soups since they tend to separate once they thaw.

Ingredients
- 10 ounces of fresh spinach or defrosted spinach
- 3 cloves of garlic, finely minced
- 1 medium onion, chopped
- 1/2 cup of unsalted butter
- 2 cups of heavy cream
- 1 ounce of full fat cream cheese, softened
- 2 cups of vegetable or chicken broth
- 1/1/2 teaspoons of sea salt
- 1/8th of teaspoon of ground nutmeg
- 1/4 teaspoon of red pepper flakes, optional
- 2 tablespoons of grated parmesan cheese
Instructions
- In a large pot, over medium-high heat, add the butter and stir until melted.
- Add the onion and garlic and sauté them until they are translucent and tender.
- Add the spinach and cook until wilted about 5-7 minutes.
- Add the heavy cream, softened cream cheese, broth, salt, pepper, red pepper flakes, nutmeg and cook about 10 minutes until thickened.
- Next, stir in the parmesan cheese and mix until well combined.

- Serve the soup hot and garnish with extra parmesan cheese
- Store leftovers in the refrigerator for up to 3 days.

It's important to allow the soup to cool for a few minutes before blending. This can take anywhere before 5-10 minutes.
