My goal was to make a low-carb creamed spinach dish that everyone would enjoy and love. I’m telling you now, this is it.
It’s rich, creamy, cheesy, and filling! Your little ones won’t even notice it’s spinach and will probably ask for seconds! And we all know how hard it can be to convince kids (and even adults!) to eat their spinach!
With that being said, you can skip the cheese topping for an easy creamed spinach recipe that is made only on the stovetop, which is still a great way to enjoy the benefits of this powerhouse vegetable.

- Fresh spinach: I like using fresh baby spinach.
- Unsalted butter
- Heavy cream
- Parmesan cheese
- Sharp White Cheddar Cheese
- Sea salt
- Black Pepper
- Ground nutmeg
How To Make Keto Creamed Spinach
This keto recipe for creamed spinach is the perfect side dish. It’s super easy to make with just a few steps and basic ingredients you probably already have in your fridge.
You will first make the creamy sauce, which does not need any thickening agent since the heavy whipping cream does this perfectly without the use of flour. Begin by melting the butter in a saucepan and adding the heavy cream over medium heat.
Then, you’ll add the shredded white cheddar cheese and stir it often until the cheese has completely melted and incorporated into the sauce.
Next, add the parmesan cheese, stirring often once again, until melted and combined.
Then it’s time to add the spinach and stir to mix and coat the spinach entirely with the cream sauce. Continue cooking until the spinach cooks and wilts. This should take anywhere from 5-7 minutes over medium-high heat.
Once the spinach has wilted completely, you’ll transfer the mixture into your buttered baking dish, top it with the remaining cheese, and bake until the cheese is browned and bubbly.

Store any leftovers in an airtight container in the refrigerator for up to three days for best results. I don’t recommend freezing, as it will mess with the creamy texture of the cheese sauce once it thaws.

Keto Creamed Spinach
This keto cream of spinach soup is a delicious way to get more of this super-food leafy vegetable into your low-carb diet.
Ingredients
White Cheddar Cream Sauce
- 4 oz sharp white cheddar, chopped
- 1/4 cup unsalted butter
- 1/8 teaspoon of ground nutmeg
- 2 cups of heavy cream
- 1/4 cup parmesan cheese
- 1/8 teaspoon black pepper
- 1/4 teaspoon salt
- 1-1/2 pounds of fresh spinach or 10 ounces of frozen spinach
Topping
- 4 oz sharp white cheddar, chopped
- 1/4 cup parmesan cheese
Instructions
- In a small saucepan, over medium heat, melt the butter then add heavy cream and cheese.
- Allow the cheese to fully melt and be fully incorporated into the sauce, before adding the parmesan cheese. Stir the sauce occasionally until well combined.
- Then, tear the fresh spinach leaves and add to the sauce. Stir to mix and coat the spinach thoroughly. Continue to cook until the spinach wilts.
- Once the spinach has wilted, transfer the mixture into your buttered baking dish.
- For the topping, in a small bowl combine the chopped white cheddar and parmesan.
- Cover creamed spinach with the topping and bake for 15 to 20 minutes, and then broil for 5 minutes until the top is golden brown.
- Store leftovers in the refrigerator for up to 3 days.
Notes
FROZEN SPINACH TIPS
If using frozen spinach allow the spinach to thaw completely. Then squeeze out the excess water by wrapping the thawed spinach in cheesecloth wring the spinach until mostly dry.
