It’s a Cajun cauliflower rice recipe that quickly became one of our family’s favorite dishes and a great addition to our keto recipes.
Why Is Dirty Rice Dirty?
Wondering how this traditional Louisiana Creole dish got its name and why it’s called dirty rice?
The use of organ meat, like chopped or ground chicken livers and gizzards, along with onions, celery, green pepper, and Creole spices, gives the rice a “dirty” appearance.
Although the name may not sound appetizing, it’s actually a very flavorful dish that can be enjoyed any time of the year but is especially welcomed during Mardi Gras, where many variations are served in Southern Louisiana.
To be clear, any ground meat, including wild game, can mimic the dirty color in this classic Cajun dish.
I wanted familiar flavors so that the entire family could embrace the recipe. That’s why I chose to use a combination of ground pork and ground beef.
Ingredients To Make A Keto Dirty Rice Recipe

The following are the ingredients needed to make Creole dirty cauliflower rice:. Note that the full printable recipe card is at the bottom of the page.
- Mild ground pork sausage without casing (substitute the ground sausage for chopped chicken livers)
- Lean ground beef
- Olive oil or any neutral-tasting oil
- Onion, finely chopped
- Green bell pepper, finely chopped
- Celery, finely chopped
- Garlic cloves, finely minced
- Dried oregano
- Cauliflower rice: You can use frozen cauliflower rice that has been cooked in the microwave or fresh cauliflower that has been grated using a food processor or box grater
- Salt
- Bay leaves
- Dried thyme
- Chili powder
- Ground black pepper
- Cayenne pepper
- Garlic powder
- Onion powder
- Smokey paprika
- Dried sage
- Fresh, chopped parsley for garnish
Instructions On How To Make Keto-Friendly Dirty Rice
Cajun cooking shouldn’t be intimidating. Thankfully, this dirty rice recipe is pretty straightforward, and although it has a long list of spices, it’s easy to make.
You’ll start by sautéing the ground sausage and beef in a large skillet or wok with one tablespoon of oil over medium-high heat.
Using a wooden spoon, break up the ground meat into large pieces. Allow the meats to brown for a few minutes before breaking them into small pieces.
Cook and continue to break the ground meat until it’s fully browned and lightly crispy.
I then remove the meat from the skillet, set it aside, and proceed to add the remaining two tablespoons of oil to the pan.
To the heated oil, add the chopped onion, bell peppers, and celery and cook over medium-low heat until the vegetables are translucent and cooked.

Once the vegetables are allowed to cook, add the minced garlic and cook until tender.
Next, you’ll add the riced cauliflower, all the dry seasonings, and ground meat into the large skillet and toss well until fully incorporated.
I then add the two bay leaves and cook the dirty cauliflower rice for an additional 5-7 minutes to allow all the flavors to blend.
Before serving, remove the bay leaves and garnish with fresh, chopped parsley.
Store any leftovers in the refrigerator in an airtight container for up to three days or freeze for up to three weeks.

Keto Dirty Rice,Cauliflower Rice (Gluten-Free)
This keto dirty rice recipe is a delicious low-carb alternative to the Creole classic recipe. It's loaded with Cajun flavor and uses ground pork sausage, ground beef, celery, bell pepper, and cauliflower rice.
Ingredients
- 1 pound of mild ground pork sausage (no casing)
- 1 pound of lean ground beef
- 3 tablespoons of olive oil divided
- 1 medium onion, finely chopped
- 1 large green bell pepper, finely chopped
- 2 large stalks of celery finely chopped
- 5 garlic cloves finely minced
- 24 ounces of cauliflower rice ( you can use frozen cauliflower rice that has been cooked in the microwave or freshly riced cauliflower
- 1 1/4 teaspoons of dried oregano
- 1 1/4 teaspoon of salt
- 2 bay leaves
- 2 teaspoons of dried thyme
- 1 1/4 teaspoons of chili powder
- 1/2 teaspoon of ground black pepper
- 1/4 teaspoon of cayenne pepper
- 1 1/4 teaspoon of garlic powder
- 1 1/4 teaspoon of onion powder
- 1/2 teaspoon of smokey paprika
- 1/2 teaspoon of dried sage
- 1/2 cup of fresh chopped parsley (garnish)
Instructions
- In a large skillet or wok sauté the ground pork sausage and ground beef with 1 tablespoon of olive oil over medium-high heat. Use a wooden spoon to break the meat up into large pieces. Allow the meats to brown for a few minutes before breaking into small pieces. Cook and continue to break the ground meat until it's fully browned and lightly crispy.
- Remove the meat from the skillet and set it aside.
- Add the remaining two tablespoons of olive oil and cook the onion, bell pepper, and celery over medium-low heat until the vegetables are translucent and cooked.
- Once the vegetables are cooked add the minced garlic and cook until tender.
- Add cauliflower rice, all the dry seasonings, and ground meat and toss well until fully incorporated. Be sure to scrape the bottom of the pan as you mix to ensure you get all the browned bits.
- Add the bay leaves.
- Cook the dirty cauliflower rice for an additional 5-7 minutes.
- Remove the bay leaves and garnish the dish with fresh chopped parsley.
- Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 weeks.
Notes
Recipe makes 10 ( 1-cup) servings. Can be served as a side dish as a one-cup serving or as a main dish ( two-cup serving) in which case it will make 5 servings and the nutrition facts would need to be doubled.
You can substitute the ground sausage for chopped chicken livers.
