This keto cheesecake fluff isn’t just simple to make; you can use different ingredients to create different flavors, depending on what you use.

The vanilla extract in this recipe gives you keto vanilla cheesecake fluff. But you can swap vanilla extract for lemon zest and lemon extract or orange zest or orange extract to get lemon or orange flavors.

If you want to get really creative, you can use strawberry extract or blueberry extract to create strawberry-flavored or blueberry-flavored cheesecake fluff.

In fact, you can even fold in some mini sugar-free chocolate chips, chopped strawberries, or coconut flakes. Any combination will work while still giving the dessert a fluffy, airy texture.

  • Full-fat softened cream cheese, room temperature (block of cream cheese)
  • Heavy whipping cream, cold
  • Sugar-free powdered sweetener
  • Vanilla extract
  • Pinch of salt

How To Make Keto Cheesecake Fluff

First, let’s bring the cream cheese to room temperature and ensure the heavy cream is cold.

Then, in a large mixing bowl, using an electric mixer, combine the softened cream and half the sugar-free confectioner’s sugar substitute and salt. Whip until well combined.

Add half the heavy cream to the cream cheese mixture and beat until light and fluffy. Next, add the remaining powder sweetener and vanilla extract and combine well. Then add the rest of the heavy cream and beat until light, fluffy, and stiff peaks form.

Serve immediately or keep in the refrigerator for up to 3 days.

Feel free to serve it alone or with a few fresh berries.

Notes

The recipe calls for a 1/4 teaspoon of salt that helps balance the sweetness of the powdered sugar substitute that is not included in the four basic ingredients.

You can also use a stand mixer for this recipe with the whisk attachment for easy prep.

Best Sugar Substitutes For This Recipe

Choosing the right sweetener for your keto cheesecake fluff is important. Thankfully, you have a few options.

Personally, I really like using a powdered sugar substitute, with Lakanto Confectioner’s Sugar Substitute Monk Fruit being my favorite.

I went with a powdered sweetener because it blends easily with no gritty texture. Plus, there is barely any aftertaste.

I’m also partial to Swerve‘s confectioner’s sugar sub. However, it does have a slightly cooling aftertaste. This can be an issue for some people. In the case of cheesecake, that may not be a problem because it’s a cold dessert.

If you would rather use a granulated sweetener, you will have to double the amount of sweetener called for in the recipe, and you will need to ensure the sweetener dissolves well when mixing so that the texture of the fluff isn’t gritty.

That will be the case if you use Lakanto granulated sweetener, Swerve granulated sweetener or even Splenda.
