Keto Cauliflower Fritters

Made with riced cauliflower, it’s a delicious way to enjoy a great appetizer for a quick snack or side dish.

Like other vegetable fritters such as zucchini or broccoli fritters, they are a great way to add more veggies to your diet.

These low-carb fritters are also an easy way to use leftover cauliflower rice.

This simple recipe is a cross between veggie burgers and healthy cauliflower pancakes. They’re keto cauliflower patties with cheese mixed into them for added structure and protein.

These crispy low carb cauliflower fritters are wonderful any time of the day, and you can make it breakfast, light lunch, or even a healthy low-carb snack.

With only 1.9 grams of net carbs per fritter, you can have as many as your daily macros allow.

Make these cauliflower fritters the next time you find yourself craving hash browns. They have a similar texture to hash browns, except these can fit into a ketogenic diet. Plus, they’re entirely gluten-free!

All you need are a few simple ingredients, including cauliflower rice, eggs, shredded cheese, spices, fresh herbs, and some cooking oil, such as avocado or olive oil, to make these cheesy cauliflower fritters.

It only takes a few minutes to fry up a batch in 15 minutes. Once they’re ready, you can serve them with your favorite dipping sauce, like sugar-free ketchup, ranch dressing, or even some Tazah as Lebanese tahini sauce.

It really is the perfect snack for anyone short on time but still wants a delicious and satisfying treat.

The following are the ingredients you’ll need to make keto cauliflower fritters. Note that the full printable recipe card is at the bottom of the page, as is the nutritional data.

  • Frozen cauliflower rice, defrosted
  • Eggs, room temperature
  • Shredded mozzarella cheese or cheddar cheese
  • Finely grated parmesan cheese
  • Garlic powder
  • Onion powder
  • Italian seasoning
  • Black ground pepper
  • Red pepper flakes (optional)
  • Finely chopped fresh parsley
  • Finely chopped fresh dill
  • Avocado oil or your cooking oil of preference

How To Make Keto Cauliflower Fritters

Defrost a package of frozen cauliflower by cooking it in the microwave and allowing it to cool.

Then in a large mixing bowl, whisk the eggs along with all the dry spices. Add the defrosted cauliflower rice, shredded mozzarella cheese, parmesan cheese, and chopped parsley to the bowl.

Heat the oil in a nonstick skillet to medium-high and drop the cauliflower batter one tablespoon at a time and slightly flatten the fritters.

Be sure you do not overcrowd the pan to ensure even cooking. Cook the cauliflower fritters for a few minutes on each side until crispy.

You want the bottom of each fritter brown before flipping to be stable enough to flip.

Then just repeat with the remaining cauliflower batter and add more oil if necessary.

Once cooked, place the fritters on a paper towel to blot out any excess oil.

Serve the cauliflower fritters immediately for best results. You can store leftovers in the refrigerator for up to 3 days in an airtight container and reheat them in a skillet.

I recommend you cook these in a non-stick skillet or cast-iron skillet for best results since it will allow you to use the least oil.

These keto cauliflower fritters are crispy on the outside and loaded with cheesy flavor on the inside. They are delicious and easy to make and use simple ingredients. Plus, they are entirely gluten-free, making them the perfect appetizer or side dish.

Ingredients

  • One 12 ounce package of frozen cauliflower rice defrosted
  • 2 eggs, room temperature
  • 2 cups of shredded mozzarella cheese or cheddar cheese
  • 1/4 cup of finely grated parmesan cheese
  • 1/4 teaspoon of garlic powder
  • 1/2 teaspoon of onion powder
  • 1/2 teaspoon of Italian seasoning
  • 1/4 teaspoon of black pepper
  • 1/8 teaspoon of red pepper flakes (optional)
  • 2 tablespoons of finely chopped parsley
  • 2-4 tablespoons of avocado oil or your cooking oil of preference
  • 2 tablespoons of fresh dill finely chopped (option)
