To begin, preheat your oven to 350°F. Then, using cooking spray, grease a muffin tin, even if you’re using silicone muffin cups. In a large mixing bowl, combine the eggs, heavy cream, salt, and pepper, whisking thoroughly.

Next, add the shredded cheddar cheese, chopped bacon, red bell pepper, and green onion to the bowl, stirring until the ingredients are evenly distributed.

Then, divide the mixture equally among the muffin cups, filling each one approximately 2/3 full.

Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the eggs are set and the muffins are lightly golden on top. Once done, take the muffin tin out of the oven and let it cool for a few minutes before serving.

If you have any leftovers, store them in an airtight container in the refrigerator for up to three days or freeze them for up to three weeks.

These basic keto egg muffins are a great make-ahead breakfast option that can be customized with various flavors.

They’re also perfect for meal prep, as they can be stored in the refrigerator for up to four days or in the freezer for up to three months. Reheat in the microwave for a quick and easy breakfast on the go.

Tips for Making Perfect Keto Egg Muffins

Making keto egg muffins is easy, but there are a few tips and tricks to keep in mind to ensure that they turn out perfectly every time. Here are my top tips for making the best keto egg muffins:

1. Use a muffin pan or silicone muffin cups: To ensure that your egg muffins cook evenly and don’t stick to the pan, it’s important you still grease the muffin pan or silicone muffin cups. This ensures you can remove the egg muffins from the pan once they’re done. Alternatively, you can bake with paper liners.

2. Whisk the eggs well: To make sure that your egg muffins are light and fluffy, it’s important to whisk the eggs well before adding any other ingredients. This will incorporate air into the eggs and make them rise in the oven.

4. Don’t overfill the muffin cups: It’s important to leave the muffin cups with the egg mixture, as they will puff up in the oven and could spill over the sides. Fill each cup about 3/4 of the way full to leave room for expansion.

5. Add your favorite mix-ins: The great thing about keto egg muffins is that you can customize them with your favorite mix-ins. Try adding cooked bacon, sausage, chopped vegetables, or shredded cheese to the egg mixture before baking.

6. Bake at the right temperature and do not overbake: To ensure that your egg muffins cook evenly and don’t dry out, it’s essential to bake them at the right temperature; we will be baking at 350 degrees. Avoid over-baking the egg bites since that will cause them to have a rubbery texture.

7. Let them cool slightly before serving: Once your egg muffins are done baking, let them cool in the pan for a few minutes before removing them. This will make them easier to handle and prevent them from falling apart.

Remember, when making keto egg muffins, it’s important to use low-carb vegetables and ingredients to keep the carb count low.

By following these simple tips, you can make perfect keto egg muffins every time. Experiment with different mix-ins and flavors to find your favorite combination!
