Pumpkin spice and everything nice… that’s the heart of this delicious fall treat. I combined almond flour, pumpkin puree, and a blend of warming spices to create a donut that’s every bit as comforting as its high-carb counterpart. 

Clocking in at only 2.3 g net carbs per low carb donuts, it’s a recipe you’ll want to add your meal planner.

How To Make Low Carb Pumpkin Donuts Packed With Pumpkin Spice Flavors

To make this recipe, I preheated the oven to 350°F and generously greased the donut molds.

You can use either coconut oil or butter; the goal is to make a well-greased donut pan.

I decided to use two 6-cavity donut molds, so once the first batch was baked, I quickly refilled the molds for a second round. 

To prepare the dry ingredients, I sifted almond flour, cinnamon powder, ground ginger, ground nutmeg, ground clove, baking powder, and salt, then set the dry ingredients aside.

Next, I took out my stand mixer and beat the softened butter, cream cheese, sugar substitutes, and vanilla extract at high speed.

After a few minutes, the wet mixture became light and creamy. I then added the pumpkin puree, mixing until it was well incorporated.

After that, I added the eggs one at a time, alternating with the dry ingredients, ensuring they were mixed thoroughly after each addition, and scraping down the sides of the bowl as needed.

I used a pastry bag to pipe the batter evenly into the prepared donut pans. Then, I baked the donuts for about 18 to 20 minutes, checking with a toothpick to ensure they were done when it came out clean.

Once baked, I let the donuts cool in their molds for 10 minutes before unmolding them and transferring them to a baking rack to cool for another 5 minutes.

While the donuts cooled, I prepared the spice topping in a separate bowl by combining granulated sweetener, cinnamon powder, ginger powder, nutmeg powder, clove powder, and salt.

I then melted some butter in a shallow bowl. To finish the donuts, I dipped each face down into the melted butter and then into the spiced topping, allowing the sweetener to adhere perfectly.

Finally, I placed the coated donuts on a baking rack to let the topping set before enjoying them. This recipe yields 24 large donuts or 48 mini donuts, but you can easily halve it if you are looking for a smaller portion.

As far as which sugar substitute to use for these sugar-free pumpkin spice donuts, I have a few recommendations. If you are a regular on our site, you know I’m a fan of Lakanto Monk Fruit

This is because the texture of Lakanto is spot on since there is barely any aftertaste. It is a monk fruit and erythritol blend.

For this low-carb donut recipe, I used their brown sugar substitute for the donut batter and their white granulated sugar substitute for the cinnamon sugar topping, but feel free to use either one entirely in the recipe.

I love that Lakanto Monk Fruit is all-natural. Its sweetness comes from antioxidants called mogrosides instead of fructose or sucrose. It has zero calories and zero glycemic impact. 

I’m also partial to Swerve, another erythritol blend.  It works well in this keto donut recipe and is a great choice if you are looking for a sugar substitute with no bitter aftertaste and measures just like sugar.

Swerve is also a sugar substitute that browns and caramelizes like sugar. It is made from ingredients found in select fruits and starchy root vegetables and contains no artificial ingredients, preservatives, or flavors.

Like Lankanto, Swerve has a 0% impact on blood sugar.

If you are a fan of stevia, you can use the stevia and erythritol-based brand Pyure in this recipe. 

However, it’s important to note that if you use Pyure, you will want to use half the amount called for in this recipe since it’s a much sweeter option.

I will also add that if using a stevia blend, you will use less of the sugar-cinnamon coating to avoid it being overly sweet.

  1. Preheat the oven to 350°F. Generously grease the donut molds. I used two 6-cavity donut molds at a time, and once the first batch was baked, I refilled the molds.
  2. Sift together the almond flour, cinnamon powder, ground ginger, ground nutmeg, ground clove, baking powder, and salt. Set aside.
  3. Beat on high speed using a stand-up mixer or a handheld mixer the softened butter, cream cheese, both sugar substitutes, and vanilla extract. Beat for 2-3 minutes or until light and creamy.
  4. Add the pumpkin puree and mix just until well incorporated.
  5. Add the eggs one at a time, alternating with the dry ingredients, mixing thoroughly after each addition.
  6. Scrape the sides of the bowl periodically.
  7. Using a pastry bag, pipe the cake batter evenly into the prepared donut pan(s).
  8. Bake for about 15- 20 minutes or until an inserted toothpick comes out clean.
  9. Allow the donuts to cool in their molds for 10 minutes, then unmold them and let them cool on a baking rack for another 5 minutes before proceeding to add the spice topping.

  1. In a small bowl, combine the granulated sugar substitute, cinnamon powder, ginger powder, nutmeg powder, clove powder, and salt and set it aside.
  2. Add the melted butter to a shallow bowl.
  3. Dip each donut one at a time face down into the melted butter and then dip into the spiced topping allowing the sweetener to adhere to the donuts. Place on a baking rack to allow the topping to set before enjoying.

Notes

This recipe makes a total of 24 large donuts or 48 mini donuts. If you want a smaller portion, you have half the recipe easily.
