It’s one of the first cookies I ever attempted to make myself. Something about that criss-cross pattern always drew me in.

That should give you some indication of how important it was for me to create a keto peanut butter cookie recipe that worked perfectly. I was craving the original recipe to help silence my sweet tooth.

Almond Flour Peanut Butter Cookies

Although I’ve seen plenty of low-carb keto peanut butter cookie recipes that use only three essential ingredients, you know, the flourless peanut butter cookies—I must tell you, I’m not a fan.

Yes, those are easy cookies, but the flavor and texture didn’t measure up for me.

Remember, I was after an authentic peanut butter cookie experience.

Please understand that when this girl gets a craving, it’s vital I come up with a recipe alternative that works because cheating is just not an option.

Not unless I’m willing to pay for the days of inflammation I’m bound to experience afterward. Trust me when I tell you that the battle to be pain-free is challenging enough when I eat according to plan.

So, I don’t need to make matters worse by intentionally eating off-course. I say all that to say that a substitute needs to be spot on to avoid a setback for this girl.

The problem I had with these cookies was that they did not have enough structure and crumbled too easily. And that’s not what I was craving.

I wanted a keto peanut butter cookie that I could sink my teeth into and that would remind me of the one I made countless times for my family.

Best Sugar-Free Sweeteners For Sugar-Free Peanut Butter Cookies

When choosing a low-carb sweetener for these keto cookies, any of your favorite equivalents would work. Just keep in mind that they have varying degrees of sweetness.

Some sugar substitutes measure cup for cup, while others are not as sweet as sugar and would require more to get the same level of sweetness.

If you are a regular on our site, you know by now that I’m a huge fan of Lakanto Monk Fruit Sweetener.

This is because the texture of Lakanto is spot on since there is barely any aftertaste.

It is a monk fruit and erythritol blend. If you have not given this all-natural sweetener a try, you have no idea what you are missing. 

That being said, I’m also partial to Swerve, another erythritol blend.  It works well in this recipe and is a great choice if you are looking for a sugar substitute that has no bitter aftertaste and measures just like sugar.

Swerve is made from ingredients found in select fruits and starchy root vegetables and contains no artificial ingredients, preservatives, or flavors.

Like Lankanto, Swerve has a 0% impact on blood sugar. I know some of you are stevia fans; if that’s you, you can use the stevia and erythritol-based brand Pyure in this recipe.

However, it’s important to note that if you are using Pyure, you will want to use 1/2 the amount called for in this recipe since it’s a much sweeter option.

Lastly, if you cannot easily find a more natural sugar substitute, you can also use Splenda with great success. You will want to use Splenda, which has a bulking agent. It’s the one that comes in larger bags.

Keto Peanut Butter Cookies With Almond Flour

Enter peanut butter cookies with almond flour to the rescue! The peanut butter cookie uses almond flour to give it the perfect texture and flavor.

I’m happy to report that my determination paid off. Because I was able to create a recipe for low-carb peanut butter cookies with almond flour that not only quenched a craving but that I could proudly share with you.

My recipe calls for all-natural peanut butter, egg, sugar substitute, butter, and a cup of almond flour. That one cup of almond flour made all the difference. It’s what gave these cookies the perfect consistency.

How To Make Perfect Keto Peanut Butter Cookies

With very little prep time, you can enjoy low-carb cookies that have a very low carb count and taste like the real thing.

You’ll begin by preheating the oven to 350 degrees. Prepare the cookie sheet by lightly greasing or lining the baking tray with parchment paper.

Then, using an electric mixer, you’ll combine the peanut butter with the butter, sugar substitute, vanilla extract, and egg.

Next to the wet ingredients, you’ll add the dry ingredients: almond flour, baking powder, and salt.

Beat the mixture until it is fully incorporated.

Once the cookie dough is ready, drop by the tablespoon or small cookie scoop of dough to form little cookie dough balls and place them on the prepared baking sheet.

Then, flatten each cookie with the tines of a fork to make a crisscross pattern.

Next, bake them in the 350-degree oven until lightly golden brown around the edges, for about 10–12 minutes.

Last but not least, allow the cookies to cool completely before eating and storing, as these cookies can be very fragile until they are fully cool.

I recommend you allow the cookies to cool on the cookie sheet for about 5 minutes before transferring them to a wire rack and allowing them to cool further.

Store your leftovers in an airtight container for up to five days in the refrigerator or three weeks in the freezer.

Can You Use Peanut Butter Powder Instead Or Regular Peanut Butter In This Recipe?

I’m happy to report that you can use peanut butter powder in place of the creamy peanut butter in this recipe.

With that being said, I only recommend Naked PB Organic Powder, as it’s the one I have tested.

To do so, reconstitute the powdered peanut butter with equal parts water and powder. Then, use it in the same way you would use traditional peanut butter.

Can I tell you that when I first started baking with low-carb ingredients, I struggled? That’s because keto baking can be a bit overwhelming.

There are just so many ingredients that do not behave exactly like their high-carb counterparts. Frankly, it was frustrating.

This Keto Peanut Butter Cookie recipe uses almond flour and produces the perfect low-carb peanut butter cookie for anyone following a keto diet. It's an almond flour peanut butter cookie that will fool your taste buds.

  1. Preheat the oven to 350 degrees.
  2. Prepare the cookie sheet by lightly greasing or lining them with parchment paper.
  3. In a medium-sized bowl, using an electric mixer, beat well the peanut butter, softened butter, sugar substitute, vanilla extract, and egg.
  4. To this wet mixture add almond flour and baking powder and salt. Stir the mixture with the electric blender until fully incorporated.
  5. Then drop by the tablespoon or use a small cookie scoop of dough to form little balls and place them on the prepared cookie sheets.
  6. Once the dough balls are on the cookie sheet, flatten them with the tines of a fork and make a crisscross design.
  7. Bake the cookies in the preheated oven until they are lightly brown around the edges about 15 minutes.
  8. Allow the cookies to cool completely before eating and storing as these cookies can be very fragile until they fully cool and set.
  9. Store leftovers in the refrigerator for up to five days or freeze for up to 3 weeks.

Notes

You can substitute the peanut butter for sunflower seed butter or almond butter or even cashew butter in equal amounts.

I made them and The Little Prince said they were good. I followed your recipe but the dough was gooey so I added 1/2 cup more of almond flour. Also to make sure they would'nt be crumbly, I omitted the egg and substituted 2 teaspoons of gelatin. Baked them for 13 minutes and got a fright when they came out gooey to the touch, but after they cooled completely on the cookie sheet, they were firm and crisp. I will use this recipe from now on since my hubby has to watch his sugar and carb intake.

Hi Vici, I'm glad the substitutions worked for you but keep in mind that the recipe works well as written. The dough may be "gooey" but it firms up as it bakes.

Delicious. Didn't have time to measure ingredients and mixed it all.

Substituted some maple syrup for sugar (about a tablespoon) and coconut oil instead of butter .

My only worry is that they are so tasty they might be something I cram in, rather than have one or two as a midday stave off the hunger pangs.

I made these cookies yesterday after seeing the video challenge on YouTube and they cooked up perfectly. My husbands all time favorite cookie is peanut butter and I used to make them all the time before we went sugar free due to diabetes and I quite baking. So I looked up on YouTube yesterday for a keto recipe to make his favorite cookie and found this one on Highflautin' Low Carb. The guy made to kinds of recipes and he said without a doubt yours was the best so I hit the kitchen to start baking again. Unfortunately, I had to throw them all out. I made them exactly as per your recipe and they turned out beautifully. Like store bought. Then, the cooling effect kicked in and we both couldn't stand to eat another bite. Is there any sweetener that doesn't have that odd aftertaste?

Hi Kelly, Not sure what specific sweetener you used but Lakanto Monkfruit is a good choice Allulose has probably the least cooling effect but it will brown the cookie faster.

This is the fourth peanut butter cookie recipe I've tried and it is my favorite taste and texture wise the only gripe is the batter is very difficult to work with so I usually refrigerate it for an hour or sometimes overnight. I'm not keto but I am grain free. I used brown sugar but only half the amount and omitted the sea salt. The baking powder is salty and using only half the sugar it works well. If I added the required amount of sea salt with only using half the amount of sugar the cookies take on a very salty taste.I take two of the cookies and make a little sandwich out of them with a little bit of sugar free jelly or chocolate spread. These cookies remind me of the Italian cookies my grandma used to make.
