I decided to fill my crepes with a lightly sweetened cream cheese filling that mimics the flavor of cheesecake and then top them with a homemade strawberry sauce that is also low in carbs. 

Both the filling and the fresh strawberry sauce are simple to make and would be the perfect keto brunch recipe.

If you are wondering what exactly Crepini Cauliflower Wraps are, they are crepes made with eggs and cauliflower powder.

By using eggs and cauliflower powder in their crepes they have found a way to have a zero net carb very pliable great tasting wrap.

It’s basically, a crepe that gains its structure from the added cauliflower.

They are grain-free, paleo-friendly, dairy-free, low-carb, and low-calories! Each egg thin clocks in at only 8 calories, 1 protein, and zero net carbs!

I love that Crepini thins have a neutral taste. The texture is quite good, and since it’s pliable, once it is layered between the cream cheese filling and strawberries it’s a sweet treat that is sure to fool your tastebuds.

The following are the ingredients to make french crepes by using Crepini’s naked crepes. Note that the full printable recipe card is at the bottom of the page.

How Use Use Crepini egg wraps For Crepes

You’ll start by making the cream cheese mixture that will be the filling. In a large bowl, add the softened cream cheese, heavy cream, 1/2 cup of powder sugar-free sweetener, vanilla extract, and salt.

Next, combine with an electric mixer until light and fluffy.

Then in a separate medium bowl, combine the sliced strawberries, with the reserved 1/4 cup of powder sweetener and the reserved 1/2 teaspoon of vanilla extract.

Combine the sliced strawberries using a spatula and allow them to macerate (create their own sauce by drawing out the liquid from the strawberries) This takes about 10-12 minutes. Set it aside.

Next, it’s time to assemble the crepes. Divide the cream cheese filling evenly between the 6 crepes and spread your filling in a thin layer over the surface of the crepe.

Then fold the crepes. To fold in triangles, place the crepe on a plate, and after you have spread your filling over each crepe, fold it in half.

Next, fold over the top edge of the crepe to make a 3-inch wide triangle, repeat this step two more times.

Lastly, top the cream cheese-filled crepes with the sliced strawberries and the sauce they created by macerating.

Once the filling is added the crepes only keep for about 24 hours.

However, you can make the filling and the topping up to three days before and just assemble the day you plan on enjoying.

Best Sugar-Free Sweetener For Keto Dessert Crepes

You will be using a sugar-free sweetener for both the filling and strawberry topping.

My recommendation is to use a sugar-free powdered substitute because it combines effortlessly. Both Lakanto and Swerve have great ones. 

That being said, you can also use a granulated sugar-free option if a powdered sugar-free sweetener isn’t easily available.

If you opt to use granulated sweetener, you’ll need to double the amount called for in this recipe since the confectioner’s sweetener is doubly sweet.

My favorite granulated sweetener is  Lakanto’s brand it’s a monk fruit/erythritol blend. But you can also use Swerve another delicious granulated erythritol sugar substitute.

Or even a stevia and erythritol-based brand like Pyure. However, if using Pyure, you will want to use the amount called for in this recipe since it is as sweet as a powdered sweetener.

These Crepini strawberry cream cheese crepes are super easy, gluten-free, and sugar-free. They make the perfect keto dish to serve for breakfast, brunch, or any time dessert.

Notes

The crepes assembled and topped only keep for about 24 hours in the refrigerator.
