Low-Carb Tortillas

Easy Keto Tortillas

This recipe is seriously the easiest keto tortilla, and it’s very fast to make as well! You can enjoy homemade low-carb tortillas in under 20 minutes, from start to finish! That’s a win if you ask me!

It’s certainly a recipe you will want to make often. These gluten-free tortillas are amazingly flexible because they use flax meal, psyllium husk, and xanthan gum.

Because they are so flexible and great at making tacos and quesadillas. 

Another great thing about them is that because they’re packed with fiber, they’re quite filling!

Since they are filling, I find them perfect for making in smaller sizes (about 5 inches) and using them to make street-style tacos that are low in carbs!

Why Make Your Own Keto Tortillas?

You might be wondering why you should make your own low-carb tortillas when there are a few brands that make them, and they can be found at most grocery stores now. 

The answer is quite simple: when you make your own tortillas, you know exactly what’s going into them.

Although these store-bought low-carb tortillas may taste just like traditional tortillas, they tend to still be made with wheat flour.

Many also use other flours, such as tapioca starch or rice flour, which are still relatively high in carbs. 

They manage to get a smaller number of net carbs by solely bumping up the fiber; this isn’t always beneficial, especially for someone who is trying to lose weight.

The reason is that you’re taking in a lot more carbs than you think, and it can be why you may be unable to get into ketosis.

This is the case for many of the “keto bread” sold in a lot of stores. They can be helpful at the beginning of your journey or when a big craving hits, but I don’t recommend having them often because of this.

It’s best to make your own and be sure of your macros, especially when they’re so quick and easy to make!

How To Make Keto Tortillas

Keto Gluten-Free Tortillas Stacked On A Wooden Plate

You’ll start by grinding your flax meal into a fine powder in a clean, dry coffee/spice grinder. Then, you’ll combine all of your dry ingredients in a medium-sized bowl and add in the hot water and your choice of coconut or olive oil. 

After the dough comes together, cover your bowl with a kitchen towel and allow it to rest for 10 minutes. Then, divide the dough evenly and shape the tortillas.

I find it easiest to roll the dough into balls and flatten and shape them with the palm of my hand. The dough will be slightly sticky. This is normal. You’ll need a non-stick pan on medium heat to cook the tortillas.

Cook each side of the tortilla for about 30 to 40 seconds until toasted and golden brown.

Easy Keto Tortillas

These keto flaxseed tortillas are tender, soft, and flexible. Whether eaten alone or filled, these tortillas will allow you to enjoy a low carb option that is not only delicious but full of nutrition and fiber.

Ingredients

Instructions

  1. In a clean and dry coffee grinder, grind the flaxseed meal until it is a fine powder.
  2. In a medium bowl, combine the golden flaxseed meal, coconut flour, psyllium powder, xanthan gum, and salt. 
  3. To the dry ingredients, add the hot water and olive oil. 
  4. Mix the dough well with a silicone spatula. 
  5. Allow the dough to rest covered for about 10 minutes. Form 8 equal balls and flatten each between parchment paper or a tortilla press to form eight 5-inch tortillas.  
  6. Cook on a non-stick skillet on medium heat for about 30 seconds, then flip. Cook until each side is golden, about 1 minute. 
  7. Keep your tortillas warm by wrapping them in a kitchen towel.
  8. Leftovers can be stored in an airtight container in the refrigerator for up to five days or frozen for up to three weeks.

Notes

To warm simply reheat on the skillet until just warm. Store any leftovers in the refrigerator for up to 5 days or freeze for up to 3 weeks.

Note: The recipe doubles easily.
