- Palm shortening I prefer the Nutiva brand

Best Sugar-Free Chocolate Chips
When it comes to choosing which chocolate chips to use in this peppermint bark recipe, I personally love Lily’s semi-sweet chocolate chips for their lovely chocolate flavor and melting point.
If you prefer a more intense chocolate flavor, you could also use Lily’s dark chocolate chips. Either one works beautifully and gives consistent results.
But if you can’t get your hands on Lily’s chocolate, you can also use Hershey’s sugar-free chocolate chips. However, in this case, the chocolate flavor is not rich.
Another nice sugar-free option is ChocZero’s Dark Chocolate Sugar-free Chips. As you can see, you have several options that will keep the carbs low enough for you to enjoy them.
Are Sugar-Free Peppermint Candies Keto?
The good news is that you can find sugar-free peppermint candies easily at your local supermarket, and they are low in calories and have zero carbs.
So go ahead and enjoy crushed peppermint candy as a topping on your bark recipe for the perfect sweet treat.
How To Make Keto Peppermint Bark
Making homemade keto-friendly peppermint bark the first time is pretty straightforward. I’ll walk you through the steps to ensure you have the same great results.
First, you will need to melt your sugar-free chocolate chips. I love Lily’s chocolate, but I’ll share some other brands you can also use below.
You can melt your chocolate chips in the microwave in 20-second increments, stirring each time, or on the stovetop over a double boiler set to medium-high heat.
Then, it’s time to add a couple of tablespoons of palm shortening. This will give the bark stability and allow you to keep it at room temperature without it melting.
You could swap the palm shortening for refined coconut oil, but if you go this route, you will need to store the bark in the refrigerator.

If you use coconut oil, be sure to use refined coconut oil, which has a neutral taste and doesn’t compete with the peppermint flavor.
Next, add all the peppermint extract and stir the chocolate mixture. Pour the prepared chocolate over a parchment paper-lined cookie sheet or baking pan.
When spreading the chocolate, aim for an 8×8 square size.
You don’t want to spread the mixture the entire size of the cookie sheet pan; otherwise, it will be too thin.
Once the chocolate mixture has been spread evenly, sprinkle the crushed sugar-free mint candy over the entire surface or the bark.
Finally, place your bark in the freezer for 15 minutes to set faster.
Once the bark has chilled and hardened, use a check knife to cut the bark up into about 32 pieces to serve immediately, or wrap them in cellophane for gift-giving.
Store at room temperature in an airtight container in a cool, dry place for up to 1 week or in the refrigerator for up to 3 weeks.
You can freeze this keto bark for up to two months and defrost it in the fridge overnight.
Note that this recipe doubles easily, so stock up on ingredients and make them as gifts.

- Cut a piece of parchment paper to fit inside an 8X8 baking dish, leaving a couple of inches overhang on every side. Set it aside.
- Take the sugar-free mint candies out of their wrappers and place them in a zip-lock bag. Gently crush the candies using a rolling pin or mallet. Set the bag aside.
- Melt your sugar-free chocolate chips. You can do so in the microwave in 20-second increments, stirring each time, or on the stovetop over a double boiler set to medium-high heat.
- Add the tablespoons of palm shortening. This will give it stability and allow you to keep the bark at room temperature without it melting. You could swap the palm shortening for refined coconut oil, but if you do, you will need to store the bark in the refrigerator. If you use coconut oil, be sure to use refined coconut oil since it has a neutral taste that doesn't compete with the peppermint flavor.
- Next, add the peppermint extract and stir the chocolate mixture well. Pour the prepared chocolate over the parchment-lined 8X8 dish.
- While the chocolate mixture is still warm, sprinkle the crushed peppermint candies evenly over the surface of the chocolate bark.
- Place the chocolate bark in the freezer for 15 minutes or until it solidifies completely.
- Remove the chocolate bark from the dish using the overhang and cut it into 20 or so pieces using a chef's knife.
- Store at room temperature in an airtight container in a cool dry place for up 1 week or in the refrigerator for up to 3 weeks. You can freeze this keto bark for up to two months and defrost it in the fridge overnight.
