Let’s face it: The holidays can be a difficult time to stick to your diet—especially when it comes to baked goods.

Whether you are making these for Christmas Eve, New Year’s Day, St. Patrick’s Day, or any day, these low-carb peppermint brownies can satisfy your sweet tooth.
These fudgy, minty brownies give you all the flavor of peppermint brownies without the carbs and sugar of traditional recipes.
So you won’t have to worry about breaking your diet because you’re craving fudgy brownies.
Making keto peppermint brownies was not too difficult. I just had to make some simple swaps.
For example, instead of mint chocolate chips, I used chocolate chips that are sweetened with a sugar-free sweetener.
Although sometimes I can get my hands on some sugar-free chocolate mints, it’s not an easy task.
I got the mint flavor by using pure peppermint extract and sugar-free mint candies, but you could use sugar-free candy canes if you can quickly source them.
Let’s see what makes these peppermint brownies so special.
Ingredients Needed To Make Keto Peppermint Brownies
The following are the brownie ingredients. Note that the full printable recipe card and nutritional information are at the bottom of the page.
- Finely milled almond flour measured and sifted
- Baking chocolate
- Keto sweetener
- Sea salt
- Baking powder
- Unsalted butter
- Eggs, room temperature
- Pure peppermint extract
- Vanilla extract
- Keto-friendly chocolate chips
- Crushed sugar-free peppermint candies
Peppermint Icing
- Confectioner’s sugar substitute
- Heavy cream
- Salt
- Pure peppermint extract

- 8×8 baking pan
- Parchment paper
- Electric mixer
- Bowls
- Wire rack
How To Make Keto Peppermint Brownies
One of the best things about these peppermint low-carb brownies is that they are made with wholesome ingredients like almond flour, baking chocolate, butter, and eggs.
Not only are these ingredients keto-friendly, but they also provide plenty of healthy fats and fiber to keep you full throughout the day.
And because these brownies don’t contain any sugar or unhealthy starches, you can enjoy them guilt-free!
You’ll begin by preheating the oven to 350°F. Then, line the bottom of an 8×8-inch baking pan with parchment paper.
In a medium mixing bowl, combine the dry ingredients, such as the sifted almond flour, baking powder, and salt, in a large bowl. Then, set it aside.
Using a small microwave-safe bowl, melt the baking chocolate and butter together in the microwave, using 30-second intervals until fully melted. Be sure to stir with a spatula throughout the process.
Alternatively, you can also use a double boiler. Once melted and well combined, allow the mixture to cool for about five minutes.
Next, place the melted butter and chocolate mixture into a medium-sized bowl, and then add the granulated sugar substitute and whisk using an electric mixer until thoroughly combined.
Then, mix in the eggs, one at a time, until they are well combined, stopping and scraping the bowl once or twice as needed.

To the wet ingredients, add the vanilla and peppermint extracts and stir them. The batter should be smooth, and the sweetener should have fully dissolved into the mixture.
Next, fold in the sifted almond flour, baking powder, and salt until blended, but be careful not to overmix.
It’s important not to overmix, as this is key to ensuring your brownies are fudgy and not cakey.
Fold half of the sugar-free chocolate chips into the batter and spread the mixture into the prepared baking pan.
Sprinkle the top of the brownie batter with the remaining chocolate chips and half of the crushed peppermint candies.
Bake your brownies for about 18-20, or until the center is just set but still can jiggle. Check for this at the 18-minute mark and add more time if needed.
Allow to fully cool on a baking rack for about 15 minutes.
Then, drizzle the top of the cooled brownies with the peppermint icing, and then top the brownies with the remaining crushed peppermint candies.
Let the peppermint icing set before slicing and enjoying it.
Store leftovers in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 weeks.
Best Sugar-Free Sweeteners For Sugar-Free Peppermint Brownies
When it comes to choosing which sugar substitute to use for these mint fudgy keto brownies, I have several for you to choose from.
My first choice is Lakanto Monk Fruit. This is because it really behaves the most like regular sugar, as far as I am concerned. It is a monk fruit and erythritol blend.
Lakanto Monk Fruit gets its sweetness from antioxidants called mogrosides, instead of fructose or sucrose.
That’s why it’s a great all-natural sugar substitute and has zero calories and zero glycemic index.
I’m, however, also partial to Swerve, which is an erythritol blend. Swerve is made from ingredients found in select fruits and starchy root vegetables and contains no artificial ingredients, preservatives, or flavors.
Swerve is the name brand of Erythritol. It’s unlike other sugar alcohols that have a 0 % impact on blood sugar.
You could also use the stevia and erythritol-based brand Pyure for most of my baked goods.
But I personally am not a fan of stevia-based sweeteners because I find that I am quite sensitive to the bitter aftertaste. And in chocolate recipes, this seems to be magnified.
Having said this, if you are accustomed to using it and don’t have an issue, then I recommend using the Pyure brand.
However, you will want to use half the amount called for in this recipe since it’s much sweeter.
Lastly, if you can easily find a more natural sugar substitute, you can also use Splenda with great success.

These keto peppermint brownies are moist, fudgy, and packed with peppermint flavor. Made simply, these almond flour brownies are not just delicious but easy to make.
Ingredients
- 4 ounces baking chocolate, roughly chopped
- 3/4 cup unsalted butter
- 1 1/4 cups granulated sugar substitute
- 3 eggs, at room temperature
- 1 teaspoon vanilla extract
- 2 teaspoons of peppermint extract
- 1 cup finely milled almond flour, measured and sifted
- 1/2 cup of sugar-free chocolate chips (divided)
- 1 teaspoon baking powder
- 1/4 teaspoon sea salt
- 1/4 cup of crushed sugar-free peppermint candies (divided) about 8 candies
Sugar-Free Peppermint Icing
- 1/4 cup of confectioner's sugar substitute
- 1-2 tablespoons of heavy cream
- 1/8 teaspoon of salt
- 1 teaspoon of peppermint extract
Instructions
1. Preheat the oven to 350°F. Line the bottom of an 8x8-inch baking pan with parchment paper.
2. Combine the sifted almond flour, baking powder, and salt in a large bowl. Set it aside.

6. Fold in the sifted almond flour, baking powder, and salt until blended but be careful not to overmix. Do not over mix as this is key to making sure your brownies are fudgy and not cakey.
7. Fold half of the sugar-free chocolate chips into the batter and spread it into the prepared baking pan.
8. Sprinkle the top of the brownie batter with the remaining chocolate chips and half of the crushed peppermint candies.

Notes
Resist the urge to overbake your brownies. If you wait till no more crumbs are stuck to a toothpick, your brownies will be dry and crumbly. Do not worry about your brownies being undercooked because there will still be residue heat cooking your brownies while they cool on a baking rack.
