This keto-friendly pizza casserole takes on the appearance of deep-dish pizza or lasagna, hence its nickname, “pizza bake.” It’s a simple recipe that takes about 20–25 minutes to bake.
Like other Italian recipes, this one employs Italian seasoning, mozzarella cheese, and marinara sauce.
To keep it a low-carb recipe, we’ll be using cauliflower rice to cook it as a base in lieu of regular crust.

- Frozen cauliflower rice (cooked)
- Olive oil
- Italian seasoning
- Salt
- Black pepper
- Red pepper flakes
- Sugar-free marinara sauce
- Mozzarella cheese, shredded (divided)
- Pepperoni slices
- Mushrooms sliced
- Green bell pepper, sliced into bite-size pieces
- Grated parmesan cheese
How To Make Keto Pizza Casserole
Making this pizza keto casserole is pretty straightforward.
You’ll start by preheating the oven to 400 degrees and greasing the casserole dish with a couple of tablespoons of olive oil.
Then, proceed to cook the cauliflower rice according to the instructions on the package and set it aside.
Next, combine the cooked cauliflower rice in a medium-sized bowl with salt, black pepper, and red pepper flakes with the marinara sauce.
Spread the cauliflower mixture to the bottom of the 13×9-inch casserole dish and top it with half the shredded mozzarella cheese. Next, add the slices of bell peppers, mushrooms, and pepperonis and press them lightly into the casserole.
Then add the remaining mozzarella cheese and sprinkle the parmesan cheese over the top of the casserole with a dash of red pepper flakes.
Bake the casserole in the preheated oven for 20 minutes or until the casserole is bubbly and golden brown.
Store any leftovers in an airtight container and refrigerate for 3–4 days or freeze for three weeks.

Keto Pizza Casserole (Gluten-Free)
This recipe for keto pizza casserole is an easy one pan meal that comes together in under 30 minutes with simple, wholesome ingredients.
Ingredients
- 10 ounces of frozen cauliflower rice cooked
- 2 tablespoons of olive oil to grease the bottom of the baking dish
- 1 tablespoon of Italian seasoning
- 1/2 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/4 teaspoon of red pepper flakes
- 2 cups of sugar-free Marinara sauce
- 2 1/4 cups of shredded mozzarella cheese, shredded (divided)
- 3 ounces of pepperoni slices
- 4 ounces of mushrooms sliced
- 1/2 a green bell pepper, sliced into bite size pieces
- 1/4 cup of grated parmesan cheese
Instructions
- Preheat oven to 400 degrees.
- Grease the bottom of a 13x9 inch baking pan with the olive oil and set it aside.
- Cook the cauliflower rice according to the instructions on the package and set aside.
- Combine the cooked cauliflower rice in a medium-sized bowl with salt, black pepper, Italian spices, and marinara sauce.
- Spread the cauliflower mixture to the bottom of the prepared pan and top it with half the shredded mozzarella cheese. Next, press the mushroom slices, bell pepper, and pepperonis lightly into the casserole, then add the remaining mozzarella cheese and sprinkle the parmesan cheese and red pepper flakes over the top of the casserole.
