What’s The Best Bacon To Use When Wrapping Chicken?

When it comes to choosing the best piece of bacon for wrapping chicken, you’ll want medium-cut bacon slices with a uniform thickness.

This is the best way to ensure an even cooking time. If the bacon is too thick, it will prevent the piece of chicken under the bacon from cooking properly.

You’ll risk overcooking the chicken and trying to cook the top of the bacon. The cooking process will be skewed if you choose bacon that is too thick.

How To Make Keto Bacon-Wrapped Chicken

Making this keto-friendly bacon-wrapped chicken is pretty straightforward.

You’ll start by preheating the oven to 375 degrees F and then proceed to make the dry rub.

In a small bowl, combine well the brown sugar substitute, salt, paprika, chipotle powder, garlic powder, onion powder, cumin powder, and black pepper to make your rub.

If you want a spicy rub, add 1/4 teaspoon of cayenne pepper or red pepper flakes to the mixture. 

Rub half the seasoning all over the chicken breasts, then wrap each chicken breast with two slices of bacon.

Once the chicken is fully wrapped in bacon, place the chicken breast seam side down on an aluminum foil-wrapped pan that can accommodate all the chicken.

Then sprinkle the remaining seasonings over the top of the chicken and bake for thirty-thirty-five minutes. Be sure to baste the chicken with the pan drippings a few times during the cooking process.

If, after the chicken is cooked, the bacon has not fully crisped, you can broil it in the oven for a few minutes until it does.

How Long Does It Take To Cook Bacon Wrapped Chicken?

On average, chicken breasts that are covered in bacon and baked in a 375-degree F oven take anywhere between thirty to 35 minutes to cook. 

The internal temperature of the chicken should reach 165 degrees F on a meat thermometer to be considered safe to eat. 

The cooking time will vary if cooking skinless chicken thighs, since dark meat takes a little longer to cook.

Best Brown Sugar Substitute To Use In Keto Bacon Wrapped Chicken

As far as a brown sugar substitute, I can recommend this bacon chicken. I like using Sukrin Gold.

The brown sugar substitute caramelizes as the chicken bakes, giving it a depth of flavor that you would otherwise miss. Therefore, I wouldn’t omit it if you want to ensure the same results.

You can also use Lakanto Golden and Swerve’s Brown Sugar.

And if you can’t get your hands on some brown sugar substitutes, you could use a granulated sugar substitute instead.

  5. Sprinkle the remaining seasonings over the top of each chicken and bake for 30-35 minutes. Be sure to baste the chicken with the pan drippings a few times during the cooking process.
  6. If after the chicken is cooked the bacon has not fully crisped, you can broil in the oven for 2-3 minutes until it does.
  7. Store leftovers in the refrigerator in an airtight container for up to 3 days or freeze for up to 3 weeks.

Notes

This recipe can be doubled easily for when you want to feed a crowd or for meal prepping.

If you want a spicy rub, add 1/4 teaspoon of cayenne pepper or red pepper flakes to the mixture. 

Chicken Thighs & Drumsticks Instructions

Although this recipe calls for chicken breasts you can substitute them for chicken thighs or drumsticks. You will just need to bake for 35-40 minutes until the chicken is cooked and a meat thermometer registers 165 degrees F.
