Keto Blackberry Bars

These keto blackberry bars are a delicious anytime treat. My recipe for low-carb blackberry bars is not only sugar-free but also gluten-free, making them keto-friendly.

I use both almond flour and coconut flour in this keto bar recipe for a slightly chewy consistency.

The addition of cream cheese in the batter gives these bars extra structure and makes them a great packable blackberry dessert.

With only 4.4 g net carbs and 5.9 total carbs, it’s the best way to enjoy a keto dessert bar using fresh or frozen blackberries for a perfect snack.

The best part is that they can be made any time of year since fresh blackberries can be swapped for frozen berries.

If you love blackberries, this keto-friendly bar recipe is the perfect solution during busy weekdays when you’re looking for a sweet treat.

How To Make Keto Blackberry Bars

Making these keto blackberry bars is pretty straightforward. Start by preheating the oven to 350 degrees.

Prepare your baking dish or pan by greasing it well with butter or parchment paper. I prefer using butter to grease my pan because it gives the bars extra flavor.

In a large bowl, using an electric mixer, beat together softened cream cheese, vanilla extract, lemon extract, sugar substitute, and eggs one at a time, making sure they are well incorporated into the batter.

Add the almond and coconut flour, baking powder, salt, and xanthan gum to the wet ingredients and combine well until fully incorporated.

Spread half of the batter on the bottom of the prepared pan. This will be the bottom layer.

Once that’s done, add the blackberry layer over the top. Note: If using frozen blackberries, there is no need to defrost them.

Cover the blackberry mixture with the remaining cookie bar dough before baking it for about 30 minutes or until golden brown in the preheated oven.

To make the keto vanilla icing, simply mix all the ingredients in a separate bowl.

Once the bars have cooled, drizzle the top with the vanilla icing for a delicious dessert that, although sugar-free, the entire family will love!

Store any leftovers in an airtight container in the refrigerator for five days or in the freezer for up to three weeks.

Best Sugar-Substitutes For Sugar-Free Blackberry Bars

You can use your sweetener of choice, but it needs to be sugar-free and keto-friendly. My top choice is a monk fruit erythritol blend for best results. My personal favorite is Lakanto’s brand

I also use Swerve an erythritol sugar substitute, with great success.

You could also use a stevia- and erythritol-based brand like Pyure for most of my baked goods. However, if using Pyure, you will want to use half the amount called for in this recipe since it’s a much sweeter choice.

Lastly, if you can’t easily find a more natural sugar substitute, you can also use Splenda or a generic brand of the same.

I know not everyone would agree with me here, and I respect that, but in my book, it’s still better than regular sugar.

However, when it comes to the keto vanilla glaze, you will have to use a confectioner’s sugar substitute. Both Lakanto and Swerve have great ones.

These delicious keto blackberry bars make the perfect keto treat. Packed with fresh or frozen blackberries and made with almond and coconut flour for a gluten-free, low-carb cookie bar!

  1. Preheat the oven to 350 degrees. Grease well with butter on an 11X7 inch baking pan.
  2. Using an electric mixer, beat the butter, cream cheese, vanilla extract, lemon extract, and sugar substitute together.
  3. Add the five eggs one at a time and mix well, making sure the eggs are well incorporated into the batter.
  4. Fold in the almond flour, coconut flour, baking powder, salt, lemon zest if adding and xanthan gum.
  5. Spread half the batter into the prepared baking dish.
  6. Add the blackberries evenly to the surface of the batter.
  7. Next, spread the remaining batter to cover the blackberries.
  8. Bake the keto bars for 30-35 minutes or until golden brown.
  9. Allow cookie bars to cool completely before drizzling the icing and slicing.
  10. Store any leftovers in the refrigerator for five days or freeze for up to 3 weeks.


Keto Vanilla Icing

  1. Combine the confectioner's sugar substitute with 3-4 tablespoons of heavy whipping cream and one teaspoon of vanilla extract.
  2. Start with two tablespoons of cream and more if needed.
  3. Drizzle the vanilla glaze over the top of the thoroughly cooled bars and allow the glaze to set before enjoying.

Notes

If using frozen blackberries there is no need to defrost before adding them to the batter.
