How To Make A Low-Carb Buckeye Bundt Cake

Using room-temperature ingredients is key to getting the texture perfect for your cake.

Since you are using cream cheese in this recipe, I recommend you set it on the counter and allow it to come to room temperature.  

Your eggs, too, need to be at room temperature. However, if you forget to leave these out like I sometimes do, you can place them in a bowl of hot water for about five minutes. 

Look, a marble buckeye keto cake is simply a chocolate and peanut butter cake. You are making two batters and then swirling them together for a marbled effect.

It’s a sweet treat with only 3.2 g net carbs per serving, making it a rich cake you can enjoy while doing a low-carb diet!

To make this low-carb buckeye cake, preheat the oven to 350 degrees and generously grease a 12-cup capacity bundt pan with butter.

Melt the baking chocolate in a microwave-safe bowl or a double boiler and set it aside for the chocolate batter.

In a large mixer, beat the room-temperature butter, softened cream cheese, peanut butter, vanilla extract, and granulated sugar substitute until light and fluffy.

Add the whole eggs one at a time, mixing well after each addition, and then mix in the heavy cream. In another large bowl, measure and sift the almond flour, and add baking powder and salt to the sifted almond flour.

Next, add the wet ingredients in spoonfuls to the dry ingredients and mix until well incorporated at low speed. Pour 3/4 of the peanut butter mixture into the greased prepared bundt pan.

Add the melted chocolate to the remaining batter and stir well. This is the chocolate batter that will be added to the peanut butter cake batter already in the pan.

Spread the chocolate mixture over the cake batter, then use a skewer or toothpick to gently swirl the top for a marble effect.

Bake for 40-45 minutes in a 350-degree oven. Once the marble bundt cake is fully cooled, drizzle the top of the cake with the chocolate ganache.

Store leftovers in an airtight container in the refrigerator for up to five days or freeze for one month. The cake can be frozen whole or in slices and can be defrosted on the kitchen counter or in the refrigerator.

For the chocolate sugar-free buckeye topping, combine melted butter, baking chocolate, and powdered sugar substitute until well combined.

Add the heavy whipping cream and peanut butter, mix until well incorporated, and then stir in the coconut oil. Drizzle over the top of the cake and allow it to set before slicing.

When choosing which sugar substitute to use for this cake, I have several for you.  Any of these options are sure to silence your sweet tooth.

My number one choice is Lakanto Monk Fruit because the texture and flavor are what I have found to be the closest to real sugar and because the flavor fools your taste buds like nothing else I’ve found in the market. 

I’m also partial to the brand Swerve which is an erythritol blend. Like Lakanto, it uses sugar alcohols and has a 0 % impact on blood sugar.

Personally, I don’t like using stevia because I am sensitive to the aftertaste. But if that’s not the case for you, you could certainly use the stevia and erythritol-based brand Pyure for this recipe.

I should also mention that I also find that stevia doesn’t play nicely with chocolate recipes, but this, of course, could be my palate. 

However, if you go this route, you will want to use half the amount called for in this recipe since it’s much sweeter.

Lastly, if you can’t easily find a more natural sugar substitute, you can also use Splenda with great success.

How To Store Your Keto Cake?

Keto cakes spoil more quickly because they use real ingredients. The best way to store your cake is to allow it to cool completely and then wrap it in wax paper and foil. 

You can store your keto cake in an airtight container in the refrigerator for up to 5 days. Alternatively, you can store or freeze it by wrapping it well and then placing it in the freezer for up to a month.

Technically, it could be frozen longer (2 months), but I feel the quality of the flavor is affected after three weeks. 

The marble cake can be stored in single-serving sizes or frozen whole. If you freeze it, I recommend thawing it in the refrigerator or on the kitchen counter.

  1. Preheat the oven to 350 degrees.
  2. Grease well with butter in a 12-cup capacity bundt pan.
  3. Melt the 3 ounces of baking chocolate and set aside for the chocolate batter.
  4. In a large mixer, beat the room-temperature butter, softened cream cheese, peanut butter, vanilla extract, and granulated sugar substitute until light and fluffy.
  5. Add the whole eggs one at a time, combining well after each addition. Then mix in the heavy cream.
  6. In another large bowl, measure and sift the almond flour.
  7. Add baking powder and salt to the sifted almond flour.
  8. Next, add the wet ingredients in spoonfuls to the dry ingredients.
  9. Mix until well incorporated at low speed.
  10. Pour 3/4 of the peanut butter cake batter into the greased bundt pan.
  11. Add the melted unsweetened baking chocolate to the remaining batter and stir well. This is the chocolate batter you will then add to the peanut butter cake batter already in the cake pan.
  12. Spread the chocolate mixture over the cake batter.
  13. To marble the cake, use a skewer or toothpick to gently swirl the top for a marble effect.
  14. Bake for 40-45 minutes in a 350-degree oven.
  15. Proceed to make the chocolate topping.
  16. Once the marble bundt cake is fully cooled, drizzle the top of the cake with the chocolate ganache.
  17. Store leftovers in an airtight container in the refrigerator for up to five days or freeze for one month. Note that the cake can be frozen whole or in slices—defrost on the kitchen counter or refrigerator.

Chocolate Peanut Butter Sugar-Free Buckeye Topping

  1. Combine the melted butter, baking chocolate, and powdered sugar substitute until well combined.
  2. Add the heavy whipping cream and peanut butter and mix until well incorporated.
  3. Stir in the coconut oil and combine well.
  4. Drizzle over the top of the cake and allow to set before slicing.
