I’ve always loved cheesecakes, and just because I went keto wasn’t going to stop my love affair with this delicious dessert. 

Thankfully, cheesecake recipes are relatively easy to convert into keto-friendly options. This is because regular cheesecake uses a few common ingredients that are already favored in the ketogenic diet.

Keto cheesecakes do not have to be complicated. In fact, with just a few essential ingredients, you can enjoy a low-carb cheesecake without worrying about being kicked out of ketosis.

It’s vital that you use only full-fat cream cheese when making a ketogenic cheesecake. Using cream cheese that has been whipped for airiness or that is low in fat will not work the same.

Leave the cream cheese that comes in a tub out of these recipes. Use only cream cheese that is solid and comes in rectangle blocks to ensure consistent results.

Allow your cream cheese to come to room temperature before you begin. By taking this extra step, you ensure that the cheesecake batter mixes quickly, producing a smooth texture. 

If your cream cheese is too cold when you begin to mix your batter, it will not blend well and will be lumpy.

By the same token, if you are making one of the recipes that use eggs, they, too, must be at room temperature so that your cheesecake rises properly.

Best Sugar-Substitutes For Low Carb Cheesecakes

Choosing a suitable sweetener for your keto cheesecake is vital. I have several I can recommend. My personal favorite is Lakanto Monk Fruit.

The texture of this sugar substitute is as close to sugar as anything else I’ve found on the market. Plus, there is barely any aftertaste.

I’m also partial to Swerve, an erythritol blend. However, it does have a cooling aftertaste. This can be an issue for some people, but in the case of cheesecake, that may not be a problem because it’s a cold dessert.

You could also use the stevia and erythritol-based brand Pyure if you prefer a stevia option.

If using this brand, be sure to reduce the amount of sweetener called for in the recipe by half since it is much sweeter.

Lastly, if you can’t easily find a more natural sugar substitute, you can also use Splenda with great success.

I know not everyone would agree with me here, and I respect that, but in my book, it’s still better than regular sugar.
