How to Make a Keto Chicken Parm Casserole
This low-carb chicken parmesan casserole is simple; there’s no need to stress over getting dinner on the table with this recipe.
It’s quite similar to a traditional chicken parm recipe but maybe even easier to make.
Plus, with its delicious breading mixture that turns golden brown when you bake it, even picky eaters won’t be able to resist this parmesan chicken casserole recipe.
Start by preheating the oven to 375 degrees. Next, thoroughly grease a 9×13-inch baking pan. Use some oil instead of butter as your lubricant to make it truly keto.
After that, use a large mixing bowl to season the shredded chicken with Italian seasoning, garlic powder, salt, and pepper.
Then add the sugar-free marinara sauce to the shredded chicken and combine well until the chicken is fully coated in the sauce. Then, set it aside.
While your chicken is marinating in the marinara, you’re going to make the breading mixture.
In a small bowl, combine the parmesan cheese, almond flour, coconut flour, garlic powder, onion powder, red pepper flakes, salt, and black pepper.
Now it’s time to assemble the chicken casserole (the most fun part!). The chicken tossed in the marinara sauce will be the first layer of the casserole.
Would you like to save this?
Lay it across the baking pan. You’re not making lasagna, so there is no need to save any chicken for later layers. Use the entire batch of chicken in the first layer.
Next, sprinkle the shredded mozzarella cheese evenly on top of the chicken layer. Then, top the casserole with the prepared breaded mixture and bake it in the preheated oven for 35–30 minutes.
Since the chicken is already cooked, you don’t need to worry about cooking the casserole until the chicken reaches a certain temperature.
Instead, focus on how the top of the casserole looks. If it’s golden brown, it’s ready.
Store leftovers in the refrigerator for up to 3 days or freeze them for up to 3 weeks.
This recipe can also be made with half a leftover rotisserie chicken that has been deboned.
The casserole can also be prepared ahead of time. Layer it and either freeze it or refrigerate it until you’re ready to bake it.
Then, follow the pre-heating and baking instructions. If you bake it right after pulling it from the fridge or freezer, the cooking time will be a little longer.
Enjoy!
