With only 3 net carbs per serving, it’s a way to enjoy a frozen treat that fits into your keto macros easily and won’t raise your blood sugar levels.
Plus, with 21 grams of fat, you can confidently declare that it’s keto, especially since these are healthy fats from the coconuts we are using.
This sugar-free coconut ice cream takes only a few minutes to prep and uses four basic ingredients if you don’t include the pinch of salt.
I added sugar-free coconut flakes to my recipe for a little added flavor and texture. However, you could leave out the desiccated coconut if you prefer a creamy texture.
I’ve included instructions for you to make this recipe both in an ice cream maker and without, so you have options.
When using an ice cream maker, it normally takes between 25-30 minutes before it has the perfect scoopable consistency. Allowing you to enjoy a delicious, homemade ice cream in about 30 minutes from start to finish.
If you make it churn-free, it will take a little over three hours before it’s ready since you’ll need to stir the frozen mixture every hour to prevent ice crystals from forming.
With that being said, it’s important to remember that homemade ice cream will not exactly have the same consistency as the store-bought product. This is especially the case with a dairy-free recipe.
Making ice cream at home means you can control exactly what goes into the recipe, so it will be void of fillers, preservatives, and chemicals, which gives you a much healthier option.
This means this recipe doesn’t need guar gum, xanthan gum, vegetable glycerin, or citric acid. Which makes it an easy-to-source ingredient treat.

- Canned coconut milk (full-fat & unsweetened) It must be full-fat and sugar-free; lite coconut milk doesn’t have coconut cream and will not produce a creamy ice cream
- Granulated sugar substitute: my favorite is monk fruit, but keto-friendly sweeteners would also work well.
- Shredded coconut flakes, unsweetened desiccated
- Vanilla extract or coconut extract
- Salt, just a pinch
- Blender
- 2-quart ice cream machine or metal pan 10-inch pan
Is Coconut Milk Keto-Friendly?
Coconut milk is a keto-approved ingredient and is a staple in the keto diet for many.
It’s especially welcomed by those doing keto who want the creaminess of heavy whipping cream but without any dairy to be concerned about.
Coconut milk is made when the coconut flesh (coconut meat) has been boiled and allowed to be reduced. Then, the shredded coconut is removed with a very fine mesh or cheesecloth.
It has a very similar consistency to whole cow’s milk and is most commonly sold in cans.
The lighter version of coconut milk typically comes in a carton and isn’t a good option for dairy-free ice cream. This is because it won’t have much fat and is not as creamy.
Does Coconut Ice Cream Contain Dairy?
This recipe is entirely dairy-free since it uses only coconut milk.
Coconut milk is a fantastic substitute for individuals wanting a rich, creamy ice cream without any real cream. Just keep in mind that it needs to be a full-fat option.
How To Make Keto Coconut Ice Cream
The measurements for this recipe are for a 2-quart ice cream maker. If you are using a larger ice cream maker, you can double the recipe easily.

Making this coconut milk low-carb ice cream is a super easy recipe. You’ll start by adding the full-fat coconut milk cans, vanilla extract, sugar substitute, and salt to the blender and blending for about 30 seconds.
Next, you’ll add the coconut flakes to the blender along with the rest of the ice cream base and process for another 15 seconds until all the mixture is completely incorporated.
If using an ice cream maker, pour the coconut milk mixture into the ice cream maker and process it according to the manufacturer’s instructions. It took my machine about 20–25 minutes to process.
Store any leftovers in a well-covered, airtight container. You will need to allow the ice cream to melt on the kitchen counter until it’s scoopable again.
No-Churn Ice Cream Instructions
Don’t have an ice cream maker? No problem; you can also make this recipe without it.
To do so, once the ice cream mixture is made, pour it into a metal pan or other freezer-safe pan, depending on what you have. Then, place the ice cream in the freezer for about an hour.
At the one-hour mark, remove the ice cream from the freezer and stir with a spoon. Then, place it back in the freezer. You will repeat this step two more times for a total of three hours.
It’s at this point that the no-churn ice cream will have the perfect consistency, similar to regular ice cream, and be ready to scoop and enjoy.
If you have any leftovers, you will need to allow the ice cream to melt on the kitchen counter until it’s scoopable again.
Best Sugar-Substitutes For Keto Vegan Coconut Ice Cream
When it comes to choosing your sweetener for this sugar-free ice cream recipe, I have several low-carb options that work well with this keto ice cream recipe.
I really like Lakanto Monk Fruit Sweetener because the texture is spot on and because there is barely any aftertaste. Plus, it uses only natural ingredients.
This is a great one, especially if you are new to sugar substitutes because it mimics sugar the most, in my opinion.
I’m also partial to Swerve, an erythritol blend, although you should keep in mind that it does have a bit more of a cooling aftertaste that some people dislike.
Alternatively, you could also use a stevia- and erythritol-based brand like Pyure. This is if you prefer to use stevia in your baked goods. If you go this route, you need to reduce the amount by half since it is twice as sweet.
Lastly, if you can’t easily find a more natural sugar substitute, you can also use Splenda with great success.
I know not everyone would agree with me here, and I respect that, but in my book, it’s still better than regular sugar.
How To Store Homemade Ice Cream
Store your homemade keto ice cream in an airtight container in the freezer. These reusable ice cream containers are made specifically for ice cream.
Add a piece of wax paper or parchment paper to the top of the ice cream and store for up to three weeks.

- Store any leftovers in a well-covered airtight container. You will need to allow the ice cream to melt on the kitchen counter until it's scoopable again.
