How To Make Coconut Flour Cranberry Cookies
But why coconut flour as a flour alternative? Well, coconut flour is not actually flour in the traditional sense.
Do you know that coconut flour has no grains or nuts and is made completely of pure coconut? This makes for a great nut-free, low-carb baking flour.
Making these low-carb cookies is a delicious breeze.
You’ll start by combing the dry ingredients first—the coconut flour, baking powder, and salt—and setting them aside.
Then, in a large bowl, with an electric mixer, you’ll cream the butter, cream cheese, sweetener of choice, orange zest, and orange extract.
Using a rubber spatula, scrape the bowl a few times to ensure it is all well combined.
Then, you will need to chill the cookie dough for at least 30 minutes so that the cookies do not spread when baking.

Once the cookie dough has chilled, you’ll bake the cookies in a preheated 350-degree oven for about 15 minutes or until lightly golden around the edges.
Allow the cookies to cool, and make the orange icing by combining all the ingredients.

Best Sugar Substitutes For Sugar-Free Cranberry Cookies
When choosing the best sugar-free sweetener, I have several options for you to choose from.
I really like Lakanto Monk Fruit Sweetener because the texture is spot on and because there is barely any aftertaste. Plus, it uses only natural ingredients.
This is a great one, especially if you are new to sugar substitutes, because it mimics sugar the most, in my opinion.
I’m also partial to Swerve, an erythritol blend, although you should keep in mind that it does have a bit more of a cooling aftertaste that some people dislike.
Alternatively, you could also use a stevia- and erythritol-based brand like Pyure.
This is if you prefer to use stevia in your baked goods. If you go this route, you need to reduce the amount by half since it is twice as sweet.
Lastly, if you can’t easily find a more natural sugar substitute, you can also use Splenda with great success.
I know not everyone would agree with me here, and I respect that, but in my book, it’s still better than regular sugar.
However, when it comes to icing, you will have to use a confectioner’s sugar substitute. Both Lakanto and Swerve have great ones.

Keto Cranberry Orange Cookies (Gluten-Free)
These delicious nut-free keto cranberry orange cookies are made with coconut flour, and fresh or frozen cranberries for a delicious low carb treat.
Ingredients
- 1 cup of coconut flour
- ½ cup finely chopped fresh or cranberries (measure after chopping) If cranberries are frozen use a food processor to chop easily.
- 1 ½ teaspoons of baking powder
- ¼ teaspoon sea salt
- ½ cup unsalted butter softened
- 4 ounces of full-fat cream cheese, softened
- 1 cup granulated sugar substitute
- 4 eggs , room temperature
- 2 teaspoons of orange extract
- 2 teaspoons of orange zest
Keto Orange Glaze:
- 1/2 cup of confectioners’ sugar substitute
- 2 tablespoons of lemon juice
- 2 tablespoons of heavy whipping cream
- 1 teaspoon of orange extract
- 1 teaspoon of orange zest
- 1/8 of teaspoon of sea salt
Instructions
- Stir together coconut flour, baking powder, and salt, and set aside the dry ingredients.
- In a separate bowl, beat together butter, cream cheese, sugar substitute, orange zest, and orange extract, until fully combined.
- Add the eggs, and beat well after each addition.
- Stir in the 1/2 cup of chopped cranberries.
- Add dry ingredients to the wet mixture, and beat until fully combined.
- Chill the dough for at least ½ hour.
- Preheat oven to 350 degrees.
- Measure a tablespoon at a time of cookie dough and roll them into balls.
- Flatten slightly each ball onto a parchment-lined cookie sheet.
- Bake for 15 minutes or until lightly brown around the edges.
- Allow cookies to cool for 30 minutes before drizzling the low-carb orange glaze.
- Store leftovers in the refrigerator for up to 5 days or freeze them for up to 3 weeks.
Keto Orange Glaze
- In a small bowl combine sugar-free confectioner's sweetener, lemon juice, orange extract, salt, and heavy whipping cream.
- Drizzle the glaze over the fully-cooled cookies.
