  • Broccoli (florets only) 
  • Celery stalk, chopped
  • Yellow onion, chopped
  • Cloves of garlic, minced
  • Heavy cream
  • Cream cheese softened
  • Sea salt
  • Freshly cracked black pepper
  • Unsalted butter
  • Dried thyme

How To Make Keto Cream Of Broccoli Soup

This recipe for keto cream of broccoli soup is easy to make and uses simple-to-source ingredients.

You’ll start by sautéing the chopped onions, celery, and garlic in butter in a 5-quart pan over medium heat until they are translucent and tender.

Add the spices and dried thyme, and sauté in the pot for about 2 minutes.

Next comes the addition of the broth and broccoli florets to the pot, which is brought to a boil.

Once the soup boils, reduce the heat to medium, partially cover it, allow it to come to a simmer, and cook until the broccoli is fork-tender.

Once the broccoli is cooked, add the heavy cream and softened cream cheese and stir until fully combined and the cream cheese has melted. Then, simmer the soup pot for about 10 minutes.

To cream the soup, you’ll either use an immersion blender or an electric blender and process the soup until smooth.  After the creamy soup has been blended, bring it back to the pot to heat it until it is hot.

This easy recipe does not use cheddar cheese, as our keto broccoli cheddar soup does. But feel free to add one cup of cheddar cheese before processing if you want a thick soup.

If you have any leftover soup, store it in an airtight container in the refrigerator for up to three days. I do not recommend you freeze this soup, as it tends to separate once it thaws.

How To Safely Puree Hot Soup In An Electric Blender

If you are blending this soup in an electric blender and not an immersion blender, it’s important to allow the soup to cool for a few minutes before blending; this can take anywhere from 5 to 10 minutes. Be sure to do it in batches and not overfill the blender.

Before adding the soup to the blender, be sure to remove the center cap from the lid. Then, place a folded kitchen towel over the top of the blender.

Hold the towel in place with your hand. This is key so that you do not risk getting burned. The towel will allow the steam to escape safely.

Be sure to fill the blender halfway. And to blend the soup in batches. Once the soup is fully blended, return it to the pan to heat through before serving.

Frozen Broccoli Option

The soup calls for fresh broccoli, but you can use frozen broccoli instead of raw broccoli in this recipe. If you go this route, reduce the broth by 1/2 cup.

This keto cream of broccoli soup is a deliciously simple recipe for a classic cream of broccoli soup minus all the carbs and gluten!

Ingredients

  • 4 cups of chicken or vegetable broth 
  • 3 medium heads of broccoli (florets only) about 8 cups
  • 1 celery stalk, chopped
  • 1 medium yellow onion, chopped
  • 3 cloves of garlic, minced
  • 1 cup of heavy cream
  • 2 ounces of cream cheese softened
  • 1 teaspoon of sea salt
  • 1/2 teaspoon of freshly cracked black pepper
  • 1/4 cup of unsalted butter
  • 1/2 teaspoon of dried thyme

Instructions

  1. In a 5-quart pot over medium heat, melt the butter and add the chopped onions, celery, and garlic. Cook until soft for about 5 minutes.
  2. Add the salt, pepper, and dried thyme and sauté for about 2 minutes.
  3. Next, add the broth and broccoli florets to the pot and bring to a boil, then reduce the heat to medium.
  4. Allow the soup to simmer, partially covered, until the broccoli is fork-tender.
  5. Add the heavy cream and softened cream cheese and stir until thoroughly combined and the cream cheese has melted. Simmer the soup for about 10 minutes.
  6. Using an immersion blender or electric blender, process the soup until smooth. See instructions for pureeing soup in a blender in the notes. Pour back into the pot and heat the soup until hot.
  7. Serve the soup hot.
  8. Store the leftovers for up to 3 days in the refrigerator. I do not recommend you freeze this soup, as it tends to separate once it thaws.

How To Safely Puree Hot Soup in Blender

FROZEN BROCCOLI OPTION

For A Thick Soup
