Making this gluten-free spinach chicken casserole is quick and straightforward. You’ll start off by using a preheated oven and then lightly grease the bottom of a 9×13-inch baking dish with olive oil.
Next, you’ll place an entire bag (eight ounces) of fresh spinach into the prepared casserole dish and press the spinach down before drizzling the top of the spinach with the remaining tablespoon of olive oil.
Prepare the creamy sauce by mixing together the sour cream or Mexican crema, full-fat mayonnaise, grated parmesan cheese, and spices in a small bowl. Then, set the sauce aside.
Next, you’ll add the boneless chicken breasts that have been seasoned and sliced in half crosswise on top of the bed of spinach.
Then, spread the creamy sauce evenly over the surface of the chicken using a spatula.
Top with the shredded mozzarella cheese, and then bake in the preheated 375-degree oven for about 45 minutes, or until the spinach wilts, the chicken breasts are cooked through, and the casserole is lightly browned.

This recipe for keto creamy spinach chicken casserole is loaded with cheesy flavor and spinach. It's a low-carb chicken casserole that comes together easily and is sure to become a family favorite.
Ingredients
- 2 tablespoon of olive oil, divided
- 1 pound of boneless chicken breasts (2) cut in half crosswise for a total of 4 pieces
- 8 ounces of fresh spinach
- 2 cups of shredded mozzarella cheese
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of onion powder
Creamy Sauce
- 1/2 cup of sour cream or Mexican Crema
- 1/2 cup of full-fat mayonnaise
- 1/2 cup of grated parmesan cheese
- 1/4 teaspoon of black pepper
- 1/2 teaspoon of onion powder
- 1/2 teaspoon of garlic powder
- 1/4 teaspoon of red pepper flakes
Instructions
- Preheat the oven to 375 degrees.
- Lightly grease the bottom of a 9x13 baking dish with a tablespoon of olive oil.
- Place the 8 ounces of fresh spinach into the prepared baking dish and press down. Drizzle the spinach with the remaining olive oil.
- Next, prepare the creamy sauce by mixing all the ingredients together in a small bowl. Set it aside.
- Slice your chicken breasts crosswise and season the chicken with salt, black pepper, garlic powder, and onion powder.
- Add the chicken breasts on top of the spinach. Then spread the sauce over the surface of the chicken using a spatula. Top with the shredded mozzarella cheese. Bake in the middle rack oven the oven for 45-50 minutes until the spinach wilts and chicken breasts are cooked through and the casserole is lightly browned.
- Store leftovers in the refrigerator for up to 2 days or freeze for up to 3 weeks in an airtight container.

In a word - yum! This is the first keto main course recipe we've attempted, and we were amply rewarded for our efforts. My husband and I like to cook and bake together.
