  • One whole chicken
  • Olive oil
  • Dried oregano
  • Dried thyme
  • Cayenne pepper
  • Smoked paprika

To prepare this cajun whole chicken in a crockpot, start by washing and patting dry the chicken.

Then, rub the chicken with one tablespoon of olive oil. In a small bowl, mix together all the dry herbs and seasonings to make a dry cajun rub.

Rub the entire chicken with the seasonings, making sure to add some inside the chicken cavity.

Add carrot and onion pieces to the bottom of the crockpot. Turn on the slow cooker for either 6 hours on low or 4 hours on high.

The chicken will release a lot of liquid during the cooking process, but the vegetables added to the bottom of the pan will help prevent it from becoming soggy.

After the chicken has cooked for the allotted time, check with an instant-read thermometer to ensure it’s done.

Place the thermometer in the thickest part of the chicken thigh, and it should register 160 degrees F when ready.

Store leftovers in the refrigerator for up to 3 days or freeze them for up to 3 weeks.

What Causes Chicken To Fall Apart In A Slow Cooker?

This recipe produces fall-apart chicken when cooked in a slow cooker because the connective tissue of the chicken is being turned into gelatin.

Plus, the wet environment that the chicken is cooked in, as it releases its juices when cooked at low temperatures, causes the collagen to dissolve and make the chicken extra tender.

When a chicken is cooked in a crockpot, it is braised and cooked in its liquid, while the environment is hot and dry when a chicken is roasted in an oven.

That explains why the meat cooks faster in an oven, but very little gelatin breakdown occurs.

If you do not want the chicken to fall apart when cooked in a slow cooker, reduce the cooking time and check for doneness sooner.

It’s possible the chicken will not register 160 degrees F if you reduce the cooking time by 60 minutes.

The chicken will be more intact, and you can finish the bird by roasting it in the oven for 30 minutes or until it reaches 160 degrees F.

Ingredients

  • 1 whole 5 pound chicken
  • 1 tablespoon of olive oil
  • 1 tablespoon of dried oregano
  • 2 teaspoons of dried thyme
  • 3 teaspoons of cayenne pepper
  • 2 teaspoons of cumin powder
  • 1 tablespoon of smoked paprika
  • 1 1/2 teaspoons of black pepper
  • 3 teaspoons of salt
  • 1 teaspoon of onion powder
  • 1 teaspoon of garlic powder
  • 2 carrots cut into 4 inch pieces
  • 1 medium onion sliced in quarters

  1. Wash and pat dry the whole chicken. Then rub the chicken with one tablespoon of olive oil.

If you're wanting a crispy skin on your chicken like a store-bought rotisserie chicken you can place the whole bird on a baking sheet and put it under the broiler for a few minutes, or until the skin crisps up.

I did not include in the nutrition facts the carrots or onions keeping things very low in carbs. If however, you decide to eat you'll need to add another 1.5 net carbs to the total
