Look, in general, casseroles can get a bad rap for being full of processed canned food, lots of carbs, and overall unhealthy. Thankfully, that doesn’t have to be the case.

I’m here to tell you that you can enjoy a delicious meal and still bring dinner to the table quickly.

So move over Hamburger Helper because this pasta-free recipe is a much healthier option.

Ingredients Needed To Make This Keto Cheeseburger Casserole

  • Lean ground beef ( I always recommend grass-fed beef when possible)
  • Salt
  • Garlic powder
  • Black pepper
  • Onion powder
  • Italian herb seasoning, salt-free
  • Baking soda
  • Frozen cauliflower rice (cooked cauliflower rice)
  • Shredded cheddar cheese
  • Chopped fresh parsley for garnish

Tomato Sauce

  • Crushed tomato sauce
  • Tomato sauce
  • Onion chopped
  • Chopped green bell pepper
  • Worcestershire sauce
  • Salt
  • Black pepper
  • Red pepper flakes

How To Make A Keto Hamburger Casserole

To prepare this casserole, start by cooking 24 ounces of frozen cauliflower rice in the microwave according to the instructions on the bag. Once cooked, place the cauliflower rice in a small bowl and set it aside.

Then, in a large skillet over medium-high heat, brown the ground beef, breaking it up and sprinkling it with baking soda and seasonings. If using baking soda to tenderize the meat, allow it to sit for 15 minutes.

Cook the beef until browned, breaking the meat mixture into pieces with a spatula. Transfer the browned ground beef to a 13×9-inch baking dish.

To make the tomato sauce, cook onions, peppers, and garlic with olive oil in a small pot over medium-high heat until the vegetables are tender and translucent.

Add canned tomatoes, dry herbs, and seasoning, then simmer the sauce for about 5 minutes before setting it aside.

Preheat the oven to 350 degrees. Layer the casserole by adding the ground beef to the bottom of the baking dish, followed by the cooked cauliflower rice, and spread it evenly.

Next, pour the tomato sauce over the cauliflower rice layer and spread it evenly, then sprinkle shredded cheddar cheese over the sauce. Bake the casserole for 35–45 minutes until the cheese melts and lightly browns around the edges.

Finally, sprinkle the top of the casserole with freshly chopped parsley and serve it hot.

Leftovers can be refrigerated for up to three days or frozen in an airtight container for up to three weeks.

Something to keep in mind when making this hamburger keto casserole is the use of lean ground beef.  I opted for 85% lean ground beef because it prevents the casserole from being too greasy when served.

I promise you won’t miss the flavor of the fat since it’s a casserole that is loaded with flavor.

Another thing to keep in mind is that, although I used frozen cauliflower rice, if frozen cauliflower isn’t an available option for you, refer to cauliflower rice to make your own.

How To Tenderize Ground Beef With Baking Soda

When preparing ground beef, I enjoy sprinkling a small amount of baking soda over the raw ground meat before cooking and letting it rest for 15 minutes. Why? It helps to tenderize the ground beef.

The addition of baking soda aids in breaking down the meat quickly, preventing large clumps of beef. The general guideline is to add 1/4 teaspoon per pound of beef, which is why I included 1/2 teaspoon in the recipe.

I find this clever trick particularly useful when making low-carb ground beef recipes, as it accelerates the cooking process and ensures the ground meat cooks more evenly.

It’s important to note that while this step is entirely optional, omitting it will result in a slightly longer cooking time for the ground beef.

Recipe Variations

This low-carb hamburger casserole is easy to customize for other flavor options. Here are a few suggestions to try:

  • Add a few dashes of hot sauce to the tomato sauce layer for a little spice.
  • Add a few crumbled slices for a keto bacon cheeseburger casserole.
  • A layer of chopped dill pickles if your family likes pickles.
  • Swap out the shredded cheddar cheese for mozzarella cheese or any other easy-melting cheese.
  • Swap out the ground beef for ground turkey or even ground chicken.

Ingredients

  • 2 pounds of lean ground beef
  • 1 teaspoon of garlic powder
  • 1/2 teaspoon of black pepper
  • 1 teaspoon of onion powder
  • 2 teaspoons of Italian herb seasoning, salt-free
  • 1/2 teaspoon of baking soda (optional refer to notes below)

  • 24 ounces of frozen cauliflower rice cooked
  • 2 cups of shredded cheddar cheese

Sauce

  • 28 ounce can of crushed tomato sauce
  • 1 medium onion chopped
  • 1/2 cup of chopped green bell peppers
  • 4 garlic cloves minced
  • 2 tablespoons of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 2 teaspoons of Worcestershire sauce
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/4 teaspoon of red pepper flakes

Parsley Garnish

  • 1/4 cup of fresh parsley chopped

Instructions

  1. Cook the 24 ounces of frozen cauliflower rice in the microwave according to the instructions on the bag and place it in a small bowl. Set it aside.
  2. Over medium-high heat in a large skillet, brown the ground beef. Break up the meat and sprinkle the baking soda and seasonings. If you opt to tenderize the ground beef with baking soda, it will need to sit for about 15 minutes before cooking the meat. Cook the beef until brown, being sure to break it into pieces with a spatula until cooked. Place the browned ground beef in a 13x9-inch baking dish.
  3. Proceed to make the tomato sauce.

Tomato Sauce Layer

  1. In a small pot over medium-high heat, cook the onions, peppers, and garlic with two tablespoons of olive oil. Cook until the vegetables are tender and translucent, about 10 minutes.
  2. Next, add the canned tomatoes and all the dry herbs and seasoning. Reduce the heat to medium and allow the sauce to simmer for about 5 minutes. Then, set it aside.

Assembling The Keto Ham Burger Casserole

  1. Preheat the oven to 350 degrees.
  2. Start by adding the ground beef to the bottom of the baking dish.
  3. Next, add the cooked cauliflower rice to the ground beef, spreading it evenly.
  4. Add the tomato sauce over the cauliflower rice layer and spread it evenly over the surface.
  5. Next, sprinkle the shredded cheddar cheese over the tomato sauce layer.
  6. Bake the casserole for 35-45 minutes until the cheese melts and has lightly browned around the edges.
  7. Lastly, sprinkle the top of the casserole with freshly chopped parsley and serve it hot.
  8. Refrigerate leftovers for three days or freeze them in an airtight container for up to three weeks.


Notes

How To Tenderize Ground Beef With Baking Soda

When cooking ground beef, I like sprinkling a little baking soda over the raw meat before cooking and letting it sit for 15 minutes. Why? It helps tenderize the ground beef. Adding some baking soda helps break down the meat quickly so that you don't have large clumps of beef. The general rule is to add 1/4 teaspoon per pound of meat, and that's why I added 1/2 teaspoon to the recipe. This is optional; note that it will take a little longer to cook the ground beef if you omit it.
