- Olive oil or avocado oil
- Small onion, chopped
- Carrots- Adds subtle sweetness and texture (used in moderation to stay keto).
- Celery, chopped- Gives a fresh, herbal crunch that complements the soup base.
- Chopped tomatoes (seeded)-Adds a pop of acidity and color without too many carbs.
- Garlic cloves, minced
- Bay leaf-Infuses the broth with a subtle, layered flavor as it simmers.
- Finely chopped Italian parsley-Adds freshness and brightness to the soup
- Low-sodium chicken broth or beef broth
- Italian seasoning
- Tomato paste-A small amount helps intensify the tomato flavor.
- Salt
- Black pepper
- Onion powder

Optional: Add one dried cayenne pepper (halved) to the pot for a spicy kick. – It adds gentle, warming heat as it simmers.
How To Make This Gluten-Free Meatball Soup Recipe

To make this keto-friendly soup, you'll begin by mixing the ground beef, ground pork, chopped onion, and all the seasonings in a large mixing bowl until everything’s just combined—be careful not to over mix, so the meatballs stay tender.
Roll the mixture into meatballs about an inch and a half wide and set them aside while you get the soup going.
In a large soup pot, heat a bit of olive oil over medium heat, then sauté the chopped onion, carrots, celery, and garlic until they’re soft and fragrant.
Next, stir in the tomato paste, chopped tomatoes, Italian seasoning, and the rest of the dry spices.
Pour in your broth of choice, toss in a bay leaf and some chopped parsley, and bring it all to a gentle boil.
Once it’s boiling, carefully drop in the meatballs, lower the heat, and let everything simmer for about 25 minutes.
The meatballs will cook right in the broth, soaking up all that delicious flavor.
When it’s done, just remove the bay leaf and you’re ready to serve!

Keto Meatball Soup (Gluten-Free)
This keto meatball soup uses a combination of ground beef and pork as well as vegetables for a delicious soup the whole family will love!
Ingredients
- 1 pound of lean ground beef
- 1 pound of ground pork
- 1 small onion finely chopped
- 1 ½ teaspoons of garlic powder
- 1 ¼ teaspoon of salt
- 1 teaspoon of onion powder
- 1 teaspoon of ground pepper
- ½ teaspoon of dried rosemary
Soup
- 2 tablespoons of olive oil
- 1 small onion chopped
- 1 cup of chopped carrots
- 1 cup of chopped celery
- ½ cup of seeded chopped tomatoes
- 3 minced garlic cloves
- 1 bay leaf
- ¼ cup of finely chopped Italian parsley
- 8 cups of low-sodium chicken or beef broth
- 2 teaspoons of Italian seasonings
- I tablespoon of tomato paste
- 2 teaspoons of salt
- 1 teaspoon of black pepper
- 2 teaspoons of onion powder
- 2 teaspoons of garlic powder
Instructions
- Combine the ground beef, ground pork, chopped onion, and seasonings in a large bowl until well combined.
- Form the meatballs (about 1 ½ inches) and set aside.
- In a large soup pot, cook the onions, carrots, celery, and garlic until tender. Then, stir in the tomato paste, chopped tomatoes, dry seasonings, and your choice of broth.
- Add the bay leaf and Italian parsley, bring the soup to a boil, and reduce to a simmer.
- Next, add the meatballs to the pot of soup and cook for about 25 minutes.
- Store leftovers in the refrigerator in an airtight container for up to three days or freeze for up to three weeks.
Notes
For a spicy option add one dried cayenne pepper chopped in half to the stock pot along with the other vegetables.
