If you’ve never had a traditional sloppy Joe, it consists of ground beef that has been cooked with a sweet tomato sauce and served on a toasted bun.
This keto sloppy Joe cornbread casserole recipe uses ground beef, and instead of using tons of sugar, it utilizes a combination of sugar-free ketchup, tomato sauce, and a little sugar substitute for the sloppy Joe sauce.
The original was always one of my favorite foods to eat growing up, and I have many fond memories of getting extremely messy eating them at my aunt’s house.
This dish is excellent for making leftovers stretch further on a weeknight or as a filling and mess-free meal for game day!
Making this a casserole that uses a keto cornbread mixture as the topping instead of sweet cornbread from a corn muffin mix makes it both gluten-free and much easier to eat without being covered in sauce!
This dish can be made with leftovers, which means you can spend less time in the kitchen and more time at the table with the family.

How To Make A Keto Sloppy Joe Casserole
If you’ve never made sloppy Joes from scratch, don’t stress it; it doesn’t get much easier (or more delicious!) than making your own homemade sloppy Joe sauce!
It’s not only easy to make but so much yummier than the canned stuff! And don’t even get me started on all the extra sugar they sneak into those premade sauces.
To make this gluten-free dish, you’ll start by cooking your ground beef with onions, garlic, and spices. Then, add in the sugar-free ketchup, tomato sauce, Worschestire sauce, mustard, hot sauce, and vinegar.
While that simmers and all the flavors meld together, you can create the cornbread topping by combining the eggs, coconut milk (or heavy cream and water), softened cream cheese, and melted butter.

Once combined, you’ll add the coconut flour, salt, baking powder, and sugar substitute and mix well.
Then all you need to do is assemble the casserole by spreading the sloppy Joe beef mixture and sauce on the bottom of a baking dish, topping this layer with the “cornbread” batter and some shredded cheddar cheese, and popping it in the oven for 30 to 40 minutes until golden brown.
Store leftovers in an airtight container in the refrigerator for up to two days or freeze for up to three weeks.

This keto sloppy joe cornbread casserole recipe is a quick and easy low-carb, gluten-free dish that can be whipped up in under an hour. A hearty meal with all the flavors of your favorite sandwich without the bun! Plus, the recipe uses coconut flour instead of cornmeal keeping it keto-friendly!
Ingredients
Keto Sloppy Joe Casserole
- 1 pound ground beef
- ½ cup of finely chopped onion
- 3 garlic cloves minced
- ¼ teaspoon of black pepper
- 1 ½ teaspoon of sea salt
- 1/4 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 cup of tomato sauce
- 1/3 cup sugar-free ketchup
- 1 tablespoon mustard
- 1 tablespoon Worcestershire sauce
- 2 tablespoons apple cider vinegar
- 2 tablespoons sugar substitute
- splash of hot sauce (optional)
Cornbread Topping
- 4 eggs, room temperature
- 1/2 cup of heavy cream & 1/2 cup of water combined for 1 cup of liquid
- 4 ounces of cream cheese, softened
- ½ cup melted unsalted butter cooled
- 1 cup coconut flour
- [2 tablespoons of sugar substitute]
- 2 teaspoons of baking powder
- 1/4 tsp of sea salt
- 1 cup of shredded cheddar cheese (topping)
Instructions
Sloppy Joe Filling:
- In a large skillet, brown the ground beef along with the onions and garlic.
- Next, add the chili powder, onion powder, garlic powder, salt, and black pepper.
- Then, add the tomato sauce, sugar-free ketchup, mustard, vinegar, Worcestershire sauce, and a dash of hot sauce.
- Allow it to simmer on medium heat for about 10 minutes. While your sloppy joe simmers, you can prepare the "cornbread" topping.
"Cornbread" topping
- Preheat oven to 400 degrees.
- Using an electric mixer, combine the eggs, the heavy cream and water mixture, softened cream cheese, and cooled melted butter in a large mixing bowl.
- Mix the batter until thoroughly combined.
- To this mixture, add the coconut flour, salt, baking powder, and sugar substitute together.
- Combine until the batter is fully incorporated.
- In an 8x8 baking dish, spread the sloppy joe filling evenly and then pour the "cornbread" mixture over the sloppy joe and spread evenly.
- Sprinkle the top of the keto casserole with the shredded cheddar cheese.
- Bake for 35- 45 minutes or until you can insert a toothpick into the "cornbread" portion of the pie and it comes out clean.
- Allow it to cool slightly before serving.
- Store leftovers in the refrigerator for up to 2 days. Freeze in an airtight container for up to 3 weeks.

I just made this but I thought it was too much cornbread so I used the leftover and made cornbread and because it was made with coconut flour I didn’t put any sugar substitute yummy thx

Looks awesome. Have not made it yet. Unfortunately cannot do beef but I imagine you can use chicken or turkey instead. Sister does a taco pie loaded with calories. I’m going to spring this on her next time I visit. Thanks

Just made this but with ground chicken instead of beef. Turned out perfectly. Didn't end up using the entire "cornbread" topping as it was quite a large portion
