Strawberry keto mousse and tangy lemon curd come together for a stunningly beautiful recipe whose flavors were meant to be together.

Like trifles, fools are layered desserts consisting of pureed fruit that has been folded into whipped cream with a mousse-like texture. It’s usually served between layers of fruit.

In the case of this recipe, we have layered a keto-friendly strawberry fool with layers of low-carb lemon curd and sliced strawberries that have been allowed to macerate with a little sugar-free sweetener. YUM.

What Is A Fool Dessert?

If you are wondering what exactly is a fool dessert, it is an English classic that’s easy to prepare. It will only take you a few minutes to whip up this delicious treat!

Traditionally, an English fool can be made with almost any fruit that is in season. The earliest mention of fruit fool dates back to the mid-17th century.

It’s called a fool, and no one knows exactly how it got this name. The French verb fouler, which means “to squash,” has been suggested as a possible reason.

According to the Oxford English Dictionary, the name trifle was originally used to describe this dessert, with the two names being used interchangeably.

However, it is thought to have been popularized by Queen Victoria’s personal chef, Francatelli.

At the time, fool recipes were very popular among English cooks and included any number of types of fruit pureed with sugar and heavy cream.

The name itself could have come from the Old French word “folle, meaning “mad” foolish. It was probably given because the dish was thought to be “foolish” work due to being so simple.

No matter how it got its name, one thing is for sure: it’s a delicious dessert that has the consistency of a creamy mousse. And now you can enjoy a fruit fool that is keto-friendly.

How To Make A Strawberry Lemon Fool

You’ll start off by making the keto lemon curd layer. It may sound challenging, but I promise it’s pretty straightforward.

Start by filling the bottom pot of your double boiler with 1-2 inches of water. Or make your own double boiler by placing a smaller pot or heatproof bowl over a saucepan of simmering water.

Just be sure that the water is not touching the bottom of the bowl so that it does not scorch the filling. You got this!

Then melt the butter in the double boiler and whisk in the sugar substitute, lemon juice, lemon extract, and lemon zest. Keep mixing until well combined. Do this over medium heat.

Next, you’ll whisk in the egg yolks one at a time and continue to cook over medium-low heat until the lemon curd becomes thick, which should take about 10 minutes.

The curd should be able to coat the back of a spoon once it’s ready.

Then, it needs to be strained over a fine-mesh colander and allowed to cool before adding the sour cream. At this point, it’s ready to be refrigerated.

To make the keto strawberry fool layer, add the sliced strawberries and lemon zest, along with the cream cheese, confectioner’s sugar substitute, and vanilla extract, into a large bowl.

Then, using an electric mixer, cream the mixture until the strawberries are incorporated into the mixture.

In a separate bowl, whip the cold, heavy whipping cream until stiff peaks form. This should take around 1-2 minutes with an electric mixer.

Then, gently fold half of the whipped cream into the strawberry mixture, being careful not to deflate the whipped cream. Once that’s done, fold in the remaining whipped cream just until combined.

Once both the lemon curd and strawberry mixture are ready to serve, spoon 1/4 cup of the keto strawberry fool mixture into individual serving dishes or other glassware.

Next, add two tablespoons of lemon curd mixture over the strawberry fool in each glass, and then add another two tablespoons of the strawberry mixture to the top of each serving.

Lastly, garnish with sliced strawberries that you can macerate with the sugar substitute.

Serve your keto strawberry lemon fool immediately, or store it in the refrigerator for up to three days.

You’ll also need a few tools to make this recipe, most of which you’ll likely have on hand.  The recipe calls for the use of an electric mixer and a couple of 4-quart glass bowls  

I personally love using a stand-up mixer because it makes things even faster, and of course, it already has a built-in bowl, but a hand mixer works perfectly well.

You’ll also need a double boiler for the lemon curd layer, or you can make your own double boiler by placing a smaller pot or heatproof bowl over a saucepan of simmering water.

Best Sugar-Substitutes For A Sugar-free Strawberry Lemon Fool

I have several options when it comes to which sweetener you can use in this sugar-free fool. I am partial to  Lakanto’s Confectioner’s Sugar Monk Fruit.

I prefer powdered sweetener because it ensures that there is no grittiness in the final dessert.

Having said that, I’m also partial to the brand Swerve’s Confectioner’s sugar, which is an erythritol blend. Similar to Lakanto, it uses sugar alcohols and has a 0% impact on blood sugar.

You could also use the stevia and erythritol-based brand Pyure if you prefer to use a stevia-based sweetener, but it does not come in a powdered option.

Do note that if this is your pick, make sure you reduce the amount called for in the recipe by half since it’s a much sweeter option.

Lastly, if you can’t easily find a more natural sugar substitute, you can also use Splenda with good success. It does not come in a confectioner’s sugar sub-option, but due to its fine texture, it would also work.

I know not everyone would agree with me here, and I respect that, but in my book, it’s still better than regular sugar.

This keto strawberry lemon fool recipe makes a delicious dessert. It's the perfect fruit fool to enjoy while doing a keto diet. It's a low-carb fool recipe that features layers of creamy strawberry mousse, fresh strawberries and, lemon curd. 

Ingredients

Keto Lemon Curd Layer

  • 3/4 cup of granulated sugar substitute 
  • 3/4 cup of fresh lemon juice about 3 large lemons
  • 7 egg yolks, room temperature
  • 1/2 teaspoon of lemon extract
  • 1 tablespoon of fresh lemon zest
  • 1/4 teaspoon of sea salt
  • 1/4 cup of sour cream
  • 2 tablespoons of unsalted butter

Instructions

    Keto Lemon Curd Filling

    1. Fill the bottom pot of your double boiler with 1-2 inches of water. Or make your own double boiler by placing a smaller pot or heatproof bowl over a saucepan of simmering water. Make sure the water is not touching the bottom of the bowl so that it does not scorch the filling.
    2. Melt the butter in the double boiler over medium heat.
    3. Once the butter is melted, whisk in the sugar substitute, lemon juice, lemon extract, and lemon zest. Keep mixing until well combined.
    4. Next, whisk in the egg yolks slowly one at a time and cook over medium-low heat until the lemon curd cooks and the mixture becomes thick for about 10 minutes. If the curd isn't thickening it's a sign that the heat needs to increase slightly. Keep stirring the curd constantly during the cooking process.
    5. Remove the lemon mixture off the stove and strain it into a small bowl using a fine mesh colander.
    6. To the lemon curd fold in the sour cream until fully combined.
    7. Place the curd into the refrigerator to cool for about 30 minutes.
    8. Allow the curd to cool on the kitchen counter for about 15 minutes and then fold the sour cream into the lemon curd mixture.

    Sliced Strawberry Garnish

    1. Slice the strawberries and toss the strawberries with lemon, lemon zest, sugar substitute, and vanilla extract.
    2. Allow the fruit to macerate on the kitchen counter for about 10 minutes to create its own sauce.

Keto Strawberry Fool

    1. In a large bowl using an electric mixer combine the sliced strawberries, and lemon zest, with the cream cheese, confectioner's sugar substitute, and vanilla extract until the strawberries are fully incorporated into the mixture. Scrape the sides of the bowl using a spatula and then resume mixing.
    2. In another large bowl, whip the cold heavy whipping cream until stiff peaks form. This should take about 1-2 minutes with an electric mixer. Fold gently half of the whipped cream into the strawberry mixture being careful not to deflate the whipped cream. Then fold in the remaining whipped cream just until combined.

To Assemble

  1. Spoon 1/4 cup of the keto strawberry fool mixture into individual serving dishes or other glassware. I used wine glasses in mine. Then spoon about 2 tablespoons of lemon curd mixture over the strawberries mixture in each glass and then add another two tablespoons of the strawberry fool mixture to the top of each serving. Lastly, garnish with the prepared sliced strawberry.
  2. Serve immediately or store for up to three days in the refrigerator.
