This keto strawberry salad is light refreshing and easy to make. The quick salad features spring mix greens, avocado, cucumber, blue cheese crumbles, and topped with a sugar-free strawberry vinaigrette!

Ingredients

  • 8 ounces spring mix salad greens or your choice of baby lettuces or baby spinach
  • 2 tablespoons of red onions sliced
  • 1 seeded cucumber chopped
  • 5 ounces of blue cheese crumbles
  • 1 cup sliced strawberries
  • 2 Hass avocados sliced
  • 1/4 cup of slivered almonds (garnish)

Strawberry Vinaigrette

  • 8 ounces of strawberries with tops removed
  • 1/4 cup of red wine vinegar or apple cider vinegar
  • 3 tablespoons of olive oil
  • 1/2 teaspoon of sea salt
  • 1/4 teaspoon of fresh black pepper
  • 2 teaspoons of sugar substitute

Instructions

Strawberry Vinaigrette

  1. In a food processor or blender combine all the ingredients until smooth and creamy.
  2. Refrigerate the vinaigrette until ready to serve for up to 3 days.

Keto Strawberry Salad

  1. Remove the tops of the strawberries and slice. Set them aside.
  2. Peel the cucumber and slice lengthwise and remove the seeds. Chop into small pieces and set them aside.
  3. Chop the red onions and set them aside.
  4. Slice the avocados and set them aside.
  5. In a large salad bowl toss the salad greens, sliced strawberries, cucumbers, blue cheese crumbles, and red onions. Top the salad with the sliced avocados and garnish with the slivered almonds.
  6. Add the dressing right before serving to avoid the greens from wilting.
