My Tips For Making The Best Guacamole

  1. Always start with ripe avocados. You’ll know the avocados are ready when you are able to slightly dent them with your thumb, but they shouldn’t be too soft.
  2. Roast the jalapeños first. This extra little step helps take away some of the heat and gives them a nice smoky flavor. Remove the seeds and ribs from the jalapeños if you do not want them to be too spicy.
  3. Add fresh lime juice as soon as you start mashing the avocados. This brightens up the flavors and prevents the guacamole from turning brown.
  4. Don’t forget to add a little sour cream or Mexican crema to the guacamole. Adding a little sour cream or Mexican crema gives the guacamole a little more flavor, and it helps keep the guacamole from turning brown.
  5. Reserve a seed or two from the avocado and place them directly into the prepared guacamole. This will also keep it from turning brown on you.
  6. Store the avocado in the refrigerator and cover it with cling wrap. The key to keeping the guacamole fresh is to allow the piece of plastic wrap to touch the surface of the guacamole. This makes an airtight seal and helps ensure it stays green for you for up to 36 hours.

How To Roast Jalapeños

This recipe calls for roasted jalapeñoes for added flavor. It’s easy to roast jalapeñoes and I will share all the ways you can do so.

Roasting the jalapeños will impart a lot of flavors but also reduce the heat level. It’s why I added extra spice by adding red pepper flakes to the recipe.

Normally, people remove the charred skin from the peppers but I like leaving them on since the skin on jalapeños is quite thin and the charred bits enhance the smoky flavor.

Roasting Jalapeños Over Open Flame

You can roast the pepper over an open flame if you have a gas stove or on a bbq by spearing the pepper with a long metal skewer. You’ll set the stove to high heat and hold the pepper about an inch away from the flame.

Hold the peppers over the flame for about a minute or until the skin begins to char and blister.

Roasting Jalapeños On A Comal Or Cast-Iron Skillet

The typical way that jalapeños are roasted in Mexico is on a comal. A comal is a thin carbon steel shallow flat pan that distributes the heat quickly and evenly.

To roast in a comal or cast-iron skillet, simply heat the pan to medium-high heat and place the jalapeños on the dry pan. Using tongs turn every 30 seconds or so until the peppers are charred on all sides.

How To Roast Jalapeños In The Oven

You can alternatively roast your jalapeños in a 425-degree oven on the top rack of the oven.

Would you like to save this?

We'll email this post to you, so you can come back to it later!

To do so simply lightly grease a baking sheet and wash and dry the peppers, cut them in half lengthwise, and remove the seeds for less spice.

Next, place them on a baking sheet with the skin facing down. Bake them for about 15-20 minutes until the skins are roasted.

How To Make Your Own Guacamole

Making this guacamole dip is pretty straightforward. The first step is to roast the jalapeños and chop them.

Then peel and cut the avocados in half and reserve one of the seeds if making the guac ahead of time.

In a large bowl or an extra large mortar and pestle mash the avocados with a potato masher or pestle.

Mash the avocados to your texture preference. I like to leave a few chunks of avocado so that it is not fully pureed and still has a little texture.

I like to leave a few chunks of avocado so that it is not fully pureed and still has a little texture.

Next, you’ll add the fresh lime juice and then the sour cream and give it a good stir.

Then mix in the dry spices being sure to distribute them evenly throughout the avocado mixture.

Add the red onions, then the tomatoes, minced garlic, roasted jalapeños, green onions, and chopped cilantro, and stir the guacamole well till fully combined.

If you want to make this guacamole ahead of time, I recommend you place one of the avocado seeds directly into the prepared guacamole and then cover the entire surface with cling wrap being sure it touches the guac.

This will keep the guacamole from turning brown for up to 36 hours.

Using Florida Avocados For Guacamole Dip

Living in South Florida I have the privilege of enjoying these tropical avocados since family and friends are always sharing their harvest.

Florida avocados are larger in size than Hass avocados and usually have a higher water content in them.  They are also a little lower in fat.

They can be used to make guacamole, but just keep in mind that you do not want to over puree them.

Although Hass avocados are what most people use when making homemade guac, you can use two Florida avocados when making this recipe and have the same delicious results.
