Keto Banana Nut Bread (Gluten-Free)

Keto Banana Nut Bread is a mock banana bread that is low in carbs and keto friendly. The recipe uses banana extract rather than bananas. This low carb banana bread is sugar-free, grain-free, gluten-free, dairy-free. Get all the flavor and texture of banana bread minus the high carbs.

Ingredients

Optional Butter Or Ghee Topping

  • 2 tablespoons of melted butter or ghee

Instructions

  1. Preheat oven to 350 degrees
  2. Grease and line with parchment paper an 8x4 inch loaf pan. Leave an overhang of parchment paper, about 2 inches, to be able to lift the loaf out of the pan once fully baked.
  3. In a medium-sized bowl, mix the following dry ingredients: almond flour, coconut flour, salt, baking powder, psyllium powder, flax meal, and spices. Set it aside.
  4. Melt the coconut oil and allow it to cool.
  5. Combine the coconut oil with the sugar substitute, maple syrup, banana extract, and vanilla extract.
  6. Next, beat the eggs one at a time. Mix until thoroughly combined.
  7. Then add to the wet batter the mixed dry ingredients and beat at low-medium speed until well incorporated. 
  8. Add ½ cup of almond or coconut milk and continue to mix.
  9. Next, stir in the walnuts, reserving a couple of tablespoons to add to the top of the banana loaf as garnish.
  10. Place the batter into the prepared pan.
  11. Then wet your hands and tap the entire surface of the bread to help smooth out the top of the batter.
  12. Next, using a finger, run it across the middle of the bread length-wise to create a small dent in the entire length of the bread.
  13. This will give the bread a place to accept the melted butter topping once baked and makes for a lovely presentation. The added tablespoons of melted butter or ghee are optional.
  14. Bake at 350 degrees for 35-40 minutes or until an inserted toothpick comes out clean.
  15. Add the melted butter or ghee to the top of the bread if doing so now while the bread is still warm.
  16. Allow the bread to cool fully on a wire rack before slicing it.
  17. Store in refrigerator for up to 5 days or freeze for up to 3 weeks.

Best Banana Extract


OliveNation Pure Banana Extract works well in giving that rich banana taste without it tasting fake.  

Another great option is OOOFLAVORS' banana nut bread extract.

If you go the route of OOOFLAVORS you'll only use four drops, whereas OliveNation Pure Banana Extract requires a full teaspoon, but they both work well.

For A Sweeter Banana Bread

You can increase the sugar substitute by 1/4 cup for a total of 1 cup for a sweeter banana bread option.
