These raspberry white chocolate fat bombs feel so much like a splurge that they’re also a perfect alternative to decadent chocolate truffles.

They’re perfect to make for special occasions such as Valentine’s Day. Instead of having a box of sugar-filled chocolates, you can have one or two of these and fool your tastebuds into thinking you’ve cheated on keto!

Because keto fat bombs can give you a boost of energy, they are also great as a pre-workout snack. Plus, they also give your brain more of the healthy fat that it craves. Imagine having a treat that is also good for you?!

You really can’t go wrong when deciding to make these frozen bites of goodness! The combination of raspberry and white chocolate is an underrated dynamic duo!

How To Make White Chocolate Raspberry Fat Bombs

These keto white chocolate raspberry fat bombs (like all of my fat bombs) take minimal effort to make and that’s part of what makes them so magical. That, and the fact they’re like little bites of heaven!

They really are a dream to make! Simply melt your coconut oil and sugar-free white chocolate in the microwave and mash up your raspberries in a saucepan with a little water and sugar substitute.

Then you’ll simply fill your silicone mold ⅓ of the way with the melted white chocolate base and pop it in the freezer for 5 minutes.

Add your raspberry filling and fill with the remaining sugar-free white chocolate base. Then freeze for 30 to 45 minutes until completely frozen.

All that’s left to do then is enjoy!

I recommend you store your fat bombs in an airtight container in your freezer as they will soften at room temperature.

Another thing to keep in mind when making these fat bombs is the coconut oil you choose.

It’s important when using coconut oil to make fat bombs, or in most keto baking, to use refined coconut oil so that it doesn’t add a coconut flavor to what you’re making.

You might be wondering why adding fat bombs to your diet is something you should even consider.

Sugar-Free White Chocolate Layer

Instructions

  1. In a small saucepan on medium-high heat combine the raspberries, sugar substitute, and water.
  2. As the mixture begins to boil, use a silicone spatula to smash the raspberries. Once boiling, reduce to low heat and allow to simmer for 3 to 5 minutes. Be sure to mix occasionally to avoid burning and sticking.
  3. When the mixture reduces by 1/3 remove from the heat and allow to cool fully.
  4. In a small microwave-safe bowl, melt the sugar-free white chocolate and coconut oil for 30 seconds in the microwave. ( alternatively, you can melt over a double boiler).
  5. Fill each cavity of your silicone mold 1/3 of the way and place it in the freezer for 5 minutes to harden.
  6. Next, add the raspberry filling, approximately 1/2 teaspoon to each cavity of your mold, and then fill with the remaining sugar-free white chocolate.
  7. Place in the freezer for 30 to 45 minutes until completely frozen. Demold the fat bombs and store them in an airtight container in the freezer.
  8. Fat bombs can keep in the freezer for up to 2 months.
